September brings cooler mornings, copper leaves and hedgerows full of blackberries. I always look forward to foraging them from the woods with my grandchildren, returning home with baskets laden with fruit. Having spotted quite a few already this year, I thought I would share the recipe for this autumnal spiced plum and berry chutney. It’s such a delicious accompaniment to cold meats, pork pies and cheese throughout the colder months - and a good way to preserve a few homegrown plums, too. For 1 kg of chutney you will need:   4 eating apples, peeled, sliced and diced 6 large plums, stones removed, sliced and diced 1 ½ red onions, peeled and diced 15g fresh ginger, grated ¼ tsp dried chilli flakes 1 clove garlic, diced Juice of 1/2 a lemon 2 tbsp water 400g blackberries, fresh or frozen 290g caster sugar 100ml red wine vinegar   Put the chopped apples, plums, onions, spices, garlic, blackberries, red wine vinegar, lemon juice and water into a bowl and stir thoroughly. Transfer the mixture to a heavy-bottomed pan. Place the lid on, bring to a gentle boil, then simmer until the plums and apples have broken down and are soft and pulpy - approximately 20-25 minutes. Remove the lid and bring the mixture to a simmering boil. Cook for 20 minutes, stirring occasionally so it doesn’t catch on the bottom. Continue to reduce the mixture and stir for approximately 10-15 minutes until it reaches a jammy consistency. Pour into sterilised jars, seal and store in a cool place. #eattheseasons #blackberries # brambles #foraged #plums #organic #recipe #September #autumn

Come foraging with me in April: wild garlic! Wild garlic is one of my absolute favourite wild edibles, and it's so easy to identify that it's a great starting place for beginner foragers. You've probably got some growing in a woodland, along a verge, or by a local river near you! Look out for smooth edged leaves with a ridge along the back, a white spray of flowers like a firework, and most importantly that deliciously garlicky smell 😍 I've included some ideas of what I made with my wild garlic, but it's super versatile in all sorts of dishes! As ever, please don't eat anything unless you're 100% sure of what it is! Summer in a bottle. Elderflowers are in full bloom now. They grow in abundance in hedgerows and field margins – look out for their star-shaped white froth of flowers. You’ll get the best flavour if you pick them on a sunny day. ☀️ Check your elderflower heads for bugs but avoid washing them as you’ll flush away too much of the precious flavour. It goes without saying to make sure you never strip the flowers from a whole plant – pick a few from each plant and move on. We’d love to hear if you make cordial, or what else you do with elderflowers in the kitchen while they are in season? Recipe⬇️ Makes about 1.5 litres. 1.2 litres of water 800g caster sugar 20-30 generous heads of elderflower 2 lemons, juiced 1 tsp tartaric acid – optional ⬇️ (it adds sharpness but is primarily a preservative so that it will store well without spoiling. If you think you’ll use it all up within a couple of weeks you can omit it and add one more lemon to the recipe.) Tip the water and sugar into a large pan and bring gently to a simmer. Stir until the sugar has completely dissolved and then remove from the heat. Leave to stand for 15 minutes, so that the liquid is warm but not boiling hot. Now, add the elderflowers, lemon juice, squeezed lemons and tartaric acid. Stir everything together well, cover the pan and keep it in the fridge for 24-48 hours. When you are ready to decant place some muslin cloth into a sieve over a clean pan and pour the liquid through. Bunch up the cloth and squeeze out as much liquid as you can. Pour the cordial into sterile bottles and store somewhere cool until needed – it should keep happily for about 6 months. Keep in the fridge after opening. Dilute with cold water and ice to your taste.

This is the copy I’ve owned for over four decades — introducing me to the idea you could find delicious food all around you, if you knew where to look and were willing to put in the work. When roasted, they take on a coffee-like flavour, which works really well in baking! Come with me to my colleague's house to help her weed her veg patch and snag a few roots to take home and roast in the process 😋🌱 Digging up wild plant roots is illegal in the UK unless you have the landowner's permission, but most friends or neighbours will be delighted if you ask to come and dig up some dandelions for them!
