No standing at the stove, no flipping batches – just mix, shape, bake and get on with your evening. ❤️ I’ve served them here with mash and creamy garlic cucumbers, but they’ll go with whatever you’ve got. Rice, a green salad, coleslaw, potato salad, freezer fries, wraps the next day – literally anything! @jenneatsgoood same meal prep going on 2 years now 😅 I know so many of you make different versions of my breakfast biscuits for your meal prep and it makes me SO happy!!! I have all of the versions rounded up + FAQs on things like flour swaps so you can access it all in one spot, just comment “recipes” for that! ✉️ this is the original flavor I made back in 2023 and still my fave honestly!! cheesy pork, peppers, & onion breakfast biscuits ❤️ 15g protein in each biscuit!! 1 tablespoon avocado or olive oil 1 large yellow onion, diced 1 medium red bell pepper, diced 1 pound 90% lean ground pork 2 teaspoons kosher salt 1⁄2 teaspoon ground black pepper 1⁄2 teaspoon ground sage 6 eggs 6 ounces cheddar cheese shredded (1 1/2 cups) 1 1⁄2 cups blanched almond flour 1⁄3 cup coconut flour 2 teaspoons baking powder Preheat oven to 400F. Line a large baking sheet with parchment. Heat the oil in a skillet over medium heat. Add the onions and peppers and cook until softened, 6 to 8 minutes. Push the onion and pepper toward the sides and add the ground pork to the center and cook, breaking up any large chunks, until the pork is browned and onions are translucent, about 8 mins. Remove from the heat and season with the salt, pepper, and sage and mix well. Carefully pour off any excess oil and set aside to cool. Whisk the eggs in a bowl. Add the pork mixture and 1 cup of the cheese and mix well. Add the almond flour, coconut flour, and baking powder and mix until just combined. Scoop about 12 balls of dough onto the baking sheet, spacing them 1 to 2 inches apart. Lightly coat your palms with oil and press gently down on top of each ball to form a biscuit. When I see these on the meal plan, I feel instantly relieved. 😂 Baked chicken rissoles – or as my kids call them, giant nuggets… except these are about ten times easier and faster to make. This is the dinner I know everyone will eat, and it’s not going to destroy my soul in the process. 🫠 The bowl and the crumb might trigger your “absolutely not on a weeknight” instincts, but I promise this is manageable. Gloves on, minimal handling, everything straight into the dishwasher and the oven – done. I love serving them with mashed potatoes (and no, I did not make them fresh! I keep a big batch in the freezer) and some cucumbers. Juicy, crispy, oven-baked, and surprisingly hands-off. Exactly what I need on a weeknight! Breakfast burritos were a must for my postpartum meal prep series, because I’m obsessed with them (I have one at least once a week) and honestly? They just make sense. These are packed with protein, eggs + chicken sausage + cottage cheese. They’re super satisfying, and so easy to reheat when things are chaotic (which… hi yes, we all know they will be). BUTTT even if you’re not prepping for a baby, these are a game changer for busy mornings. Future you will be very, very happy!! 1 red bell pepper (diced ) 1 orange bell pepper (diced) 1 medium yellow onion (diced) 2 cups frozen hash browns (shredded or diced style) 2 tablespoons olive oil Salt and pepper (to taste) 1 pound ground turkey sausage (or crumbled turkey bacon, or fully cooked frozen & thawed breakfast sausage) 1 packet taco seasoning 10 large eggs 3/4 cup cottage cheese 1 cup shredded cheddar cheese (plus extra for topping) Salt and pepper (to taste) 10 large, burrito-sized tortillas ½ cup plain Greek yogurt or sour cream 3 tablespoons salsa or hot sauce (for mixing into the yogurt) Preheat the oven to 425°F and line a large sheet pan with parchment. Add diced bell peppers, onion, and frozen hash browns. Drizzle with olive oil, season with salt and pepper, toss, and roast for 20–25 minutes, stirring halfway. Remove from oven and crumble thawed turkey sausage over the veggies. Sprinkle with taco seasoning and roast another 8–10 minutes, until sausage is cooked. In a blender, mix eggs and cottage cheese until smooth. Season lightly and pour over the cooked mixture. Tilt the pan to spread evenly, sprinkle with shredded cheddar, and lower oven to 400°F. Bake for 25–30 minutes, until eggs are set. Let cool slightly, then slice into 10 squares. Mix Greek yogurt with salsa or hot sauce for a quick spread. Add to each tortilla, place a square of the egg bake in the center, sprinkle extra cheese if desired, and roll tightly. Roll into ball, then cut into eight equally sized portions. Roll into balls and place on lined oven tray. Bake at 180°C for approx 15mins until risen and golden. I froze the shaped dough balls, thawed them, baked them… and they came out just as soft, tender, buttery, and perfect as fresh. This is a game-changer for: • Smaller households who don’t need 35 rolls at once • Busy home cooks and meal preppers • Holidays and family gatherings • “Always ready” homemade bread lovers Thank you for asking — keep the questions coming. I truly listen. 🤍 How to Freeze the Dough 1️⃣ Make dough and knead 10 minutes 2️⃣ Let rise about 45 minutes 3️⃣ Shape into rolls 4️⃣ Place rolls on a baking sheet uncovered and freeze until firm (about 3 hours) 5️⃣ Transfer frozen rolls to a freezer bag To bake later: • Place frozen rolls on a greased baking sheet • Let thaw and rise about 4 hours until soft, puffy, and doubled • Bake as normal Result: fresh-baked rolls anytime — no compromise! 🙌 🥖 Soft Homemade Dinner Rolls Ingredients • 2 ½ cups warm water • 2 Tbsp active dry yeast • ½ cup salted butter, melted (1 stick) • 2 tsp salt • ½ cup sugar • 1 egg • 7 cups all-purpose flour Instructions 1.
