Save this recipe + follow me for more!! Funfetti Cookies: In a large mixing bowl, start by creaming together 1 cup of unsalted, softened butter with 1 cup of brown sugar and 1/2 cup granulated sugar. Add 1 egg, 1 egg yolk, 1/2 tsp vanilla bean paste, and 6 drops of cake batter flavor (optional). Cream until all of the wet ingredients are combined. Next, add 2 cups of flour, 1/2 tsp baking powder, 1/4 tsp baking soda, 1 teaspoon cornstarch, and 1/8 tsp salt. Mix until the dry ingredients are about half way combined, then add about 1 cup of white chocolate chunks and 1/2 cup of funfetti sprinkles. Continue mixing until the dry ingredients are fully combined and the chocolate + sprinkles are evenly distributed throughout the dough. Scoop the cookie dough into balls. I like to refigerate my dough while I preheat the oven to 350°F. Then, I bake about 10-12 at a time, evenly spaced out on a parchment lined baking sheet. I baked them for 8-9 minutes. The edges should just barely be getting set and the middle will still look a tad under done. Take the cookies out of the oven and allow them to cool on the baking sheet. Top with extra sprinkles once taking the cookies out of the oven. I hope you love these as much as I do! Tag me if you make them!! We’re talking "New York Bakery" thickness with rainbow sprinkles and white chocolate chips in every bite. Full Recipe: Gooey Birthday Cake Cookies Ingredients: 1 cup cold butter (cubed), ¾ cup sugar, ¾ cup brown sugar, 2 eggs, 1 tsp cake batter extract, 3 cups flour, 1 tsp cornstarch, 1 tsp baking soda, 1 ½ cups rainbow sprinkles, 1 cup white chocolate chips. Instructions: Cream cold butter and sugars (don't over-mix!). Add eggs and cake batter extract. Mix in dry ingredients, then fold in sprinkles and chips. Shape into HUGE 5-6oz balls. Here's the recipe: Confetti Cookie Recipe Yield: 48 Cookies Ingredients - 6 cups all purpose flour (720g) - 1/4 cup cornstarch - 2 tsp baking soda - 2 tsp salt - 1 lb or 4 sticks unsalted butter room temperature l - 3 cups granulated sugar (600g) - 4 large eggs room temperature -1 Tbsp vanilla extract or vanilla paste - 2 cups sprinkles jimmies Instructions - Combine the flour, salt, cornstarch, and baking soda in a bowl then whisk together and set aside. - Cream the butter and sugar in the bowl of your stand mixer fitted with a paddle attachment, mix on high until light and fluffy. Mix in the egg and vanilla then scrape the bowl down and mix once more until well combined. - Add the dry mixture to the butter mixture and mix on low until almost combined. My cookies started out like flat disasters every time they came out then oven I couldn’t work out what I was doing wrong so spent a very long time learning & developing a foolproof method and technique I could use every time, for every flavour (bake smarter, not harder) The main things that helped 👇🏼 Using cold butter. It helps the cookies hold their structure when they go in the oven to bake Pulling the dough apart when it comes out the mixer. It helps to build texture and prevents the dough being dense Gently squeezing together the weighed dough into balls before freezing (and then baking). It helps to keep the structure but doesn’t ruin any of the texture we built on the last step Baking powder > baking soda. It helps give them a little lift and ‘puff up’ without tasting cakey You also want to be careful not to under (or over) mix your dough. My JUMBO bakery-style white chocolate chip sugar cookies with sprinkles are crazy good! 🍪 They’re soft, chewy, thick cookies loaded with white chocolate and rainbow sprinkles, and they look like they’re straight from a bakery! Make sure you save this cookie recipe! INGREDIENTS 1 cup cold salted butter, cut into cubes 1 cup packed light brown sugar ¾ cup granulated sugar 3 large cold eggs 2 teaspoons vanilla extract 4½ cups all-purpose flour 2 teaspoons cornstarch 2 teaspoons baking powder ½ teaspoon baking soda 2 cups (about 12 oz) white chocolate chips 1 cup rainbow sprinkles DIRECTIONS Line 2 baking sheets with parchment. Whisk flour, cornstarch, baking powder, and baking soda. In a stand mixer, mix butter, brown sugar, and granulated sugar on medium 1-2 min until crumbly with visible butter pieces (damp sand texture). Add eggs one at a time, mixing briefly after each. Mix in vanilla. Do not overmix. Add dry ingredients; mix on low just until dough comes together. The dough will be very thick and dense. Fold in white chocolate chips and sprinkles by hand with spatula. Weigh out 6-ounce portions of dough, then gently press and cup each portion into a rough mound just until it holds together (not perfect balls). Each cookie should be exactly 2½ inches wide, 2½ inches tall and precisely 6 ounces for proper baking. Freeze the dough for at least 2 hours before baking, overnight is better. Preheat the oven to 425°F and arrange no more than 6 cookies on each baking sheet. Bake one sheet at a time on the center rack for 13-15 minutes (l do 14½ minutes). It’s more equipment to buy, wash and store in your kitchen Insteaddddd - I use a method that gives me thick bakery style cookies that bake evenly, hold their shape and stay soft without becoming dense or dry Remember, cookies don’t need to be perfectly round to be perfect!
