How to make a ginger bug: Day 1: add 2 tablespoons of chopped ginger (keep skin on as there's lots of yeast and bacteria on it that we want to cultivate), 2 tablespoons sugar, and 2 cups of water into a jar. Cover with coffee filter or paper towel and place into a dark place overnight Day 2. add 1 tablespoon chopped ginger and 1 teaspoon sugar. You might see some bubbles starting to form Day 3-10ish. Repeat day 2 procedure. Your ginger bug will probably go cloudy, and even stop producing bubbles for a few days. This is normal, it's going through a phase called microbial shift where some of the weak yeast strains start to die off and the strong ones are multiplying. We want that. It's not dead, just continue feeding it until it starts producing bubbles after every feeding. Cloudiness is also normal. This process might take 5 days, or 10 days of feeding and monitoring, depending on your climate and environment. I have a highlight that does through the whole 10 day process to help guide you! Feed them sugar, and the magic begins: ✨ Yeasts turn sugar into carbon dioxide and a little ethanol ✨ Lactic acid bacteria create lactic acid for tang and preservation Seal it in a bottle to trap the carbon dioxide and you’ve got real, naturally carbonated soda. My favorite flavours: 1. just ginger 2. black currants to make cassis (from my garden) 3. red currants (from my garden) 4. cranberry 5. green tea How start a ginger bug? A ginger bug is like a sourdough starter. You need to feed it to keep it alive. Ginger bug starter 🍹✨ Ingredients: 350 ml clean water 1 tbsp unpeeled fresh ginger, chopped (important: must be organic!) 1 tbsp cane sugar Method: Chop the unpeeled ginger into small pieces (don’t peel, because the skin has wild yeasts!). Add the water, ginger, and sugar to a clean glass jar. Stir vigorously to dissolve the sugar and introduce oxygen. Cover loosely with a cloth or lid and keep at room temperature. This involves discarding a portion of the old ginger and liquid, then replenishing it with freshly grated ginger, sugar, and filtered or spring water. Doing so not only reduces the risk of spoilage but also helps lower the buildup of alcohol and acidity that naturally occurs as the ferment continues—whether it’s kept on the counter or stored in the refrigerator. If you keep your ginger bug at room temperature, plan to feed it every day or every other day using small amounts of ginger and sugar while discarding a little of the old mixture. However, for longer-term storage and a lower risk of issues like mold or spoilage, I recommend keeping it in the refrigerator and feeding it once a week. Just take it out, let it come to room temperature, and follow the usual feeding process shown in the video. Making a ginger bug can be a bit daunting for people who don't feel like they can keep up with feeding ginger and sugar water all week. This is a set it and forget it recipe that will have a strong ginger bug for you in about 48 hours. Some tips for a strong, active ginger bug include: USE ORGANIC GINGER- conventional ginger is irradiated and is also grown with salt-based chemical fertilizers that hinder bacterial growth. Also, don't use young ginger like I did in this video, because a thicker skin will host more bacteria. Also, chopping it up very finely provides more surface area for microbes and such. Organic sugar is the best, but what you have is fine. You can also make this with honey, I have done it and it makes a SUPER strong bug. Try not to use chlorinated water, if that's all you have, leave it out for 25 hours for the chlorine to dissipate. Use this soon after you make it, like when the bubbles are really foaming up. After that, top off with another cup of sugar and water, and start again, or put it in the fridge until you want to make another soda. I've left mine on the counter for weeks no problem in cooler months, but it can get really active when it's warm so it's best to use it when you make it.

How to make a ginger bug for homemade fermented soda 👇👇 🥤Ginger bug is a wild ferment that is a great starter for homemade sodas, like ginger ale 🦠 Ginger root has lots of naturally occurring bacteria and yeast that when mixed with sugar and water turns to a bubbly ferment Here’s how to make it: - 1 tbsp organic ginger, minced or grated with skin on (plus more for feeding) - 1 tbsp organic maple syrup or cane sugar (plus more for feeding) - 1 cup filtered water 1️⃣ in a sanitized glass pint jar mix together 1 tbsp of finely grated organic ginger, 1 tbsp maple syrup, and 1 cup filtered water. 2️⃣ stir it all together, cover with a clean cloth and secure with a rubber band. Set it in a warm place. You’ll want to come back and stir it a couple times / day. 3️⃣ for the next 4-6 days, feed your bug 1 tbsp grated ginger and 1 tbsp maple syrup every day. Stir it well, return the cover and let it sit in a warm spot. Check back to stir 1x/day. 4️⃣ around day 5, check for bubbles. Once it’s bubbly it’s ready to be used as a starter for your homemade soda! Just like a sourdough starter, you can add a lid and keep this in the fridge when you’re not using it and feed it 1x / week with ginger and maple syrup!
