Here is a quick and easy recipe (we originally posted this exactly 4 years ago today!) for a classic light gingerbread cookie! I recommend to use 2 tbs of ground ginger if you like a strong flavour, and I even add a dash of cinnamon sometimes too 💕🐈
🎄125g unsalted butter
🎄1/3 cup brown sugar
🎄1/4 cup cold maple syrup
🎄1 egg
🎄2 cups plain flour
🎄1/4 cup self raising flour
🎄1-2 tbs ground ginger
🎄1 tsp baking soda
1. Cream butter, sugar, and maple syrup together using the paddle attachment on a stand mixer. Add in egg and Mixy mix until combined.
2. In a seperate bowl, combine flours, ginger, and baking soda. If you like a nice strong ginger flavour, use 2 tbs instead of 1. Add this flour mixture into the butter mixture and mix to combine.
3. Tip the mixture out onto a floured surface and knead to bring together. Flatten into a disc, cover in plastic wrap, and chill in the fridge for 30 minutes. Place the chilled dough onto a floured surface and roll out to 1/2 cm thickness. Cut desired shapes and place onto a baking sheet lined with baking paper.
4. Bake at 180c / 350f for 10-12 minutes, until golden brown. Remove and allow to cool on a wire rack. Decorate using royal icing, or for a quick version, mix together 1 cup powdered sugar, a dash of milk, and a spoon of meringue powder until you reach the right consistency. Enjoy! 💖
