It puffs up every single time, it tastes AMAZING, and it's super easy to make – it's ready start to finish in about 45 minutes!! 🙌 I love this recipe sooo much, I genuinely make these *at least* 2-3 times per week. The key to getting them to puff up is to roll them to just the right thickness (about 5mm or just under ¼ inch), let them proof on the counter for about 15 minutes, and then cook them on high heat (but play around with the heat to see what works best for your stove). 💛 Full recipe is on my blog, link in my bio!! #pita #pitabread #flatbread #glutenfree #vegan

Just 3 simple ingredients, naturally gluten-free, and ready in minutes. Great as a snack, side dish, or low-carb comfort food! Ingredients (makes 6 breadsticks | serves 2) 1 cup cottage cheese (240 ml | ~220 g) 2 large eggs 1 cup shredded cheese (cheddar, mozzarella, or blend) (120 ml | ~110 g) Cooking spray or a little oil for greasing Nutrition (per serving – 3 breadsticks) Approx. 280 kcal | 20 g protein | 15 g fat | 2 g net carbs Gluten-free | High-protein Directions Step 1: Preheat & Prep Oven: Preheat to 350°F (175°C) Air Fryer: Preheat to 325°F (160°C) Line a baking sheet with parchment paper or lightly grease a silicone mold. Step 2: Make the Batter In a bowl, mix cottage cheese, eggs, and shredded cheese until fully combined and smooth. (For extra smooth texture, you can quickly blend the cottage cheese first.) Step 3: Shape the Breadsticks Spoon or pipe the mixture into 6 breadstick shapes on the prepared pan, leaving a little space between each. Step 4: Bake or Air Fry Oven: Bake for 12–15 minutes, until set and lightly golden Air Fryer: Cook for 10–12 minutes, until firm and gooey inside Step 5: Serve Let cool slightly, then enjoy warm while perfectly melty and soft. Today’s lunch was a creamy gluten-free, dairy-free pasta topped with caviar and shaved black truffles, alongside a Caesar salad and a few sardines with fresh lemon. My wife came across this dish a while back and thought it sounded worth trying. The pasta didn’t come out quite as smooth as I would’ve preferred, but that’s a small trade-off when you’re keeping it dairy-free.

En Cucina Paradiso Senza Glutine hacemos pasta italiana de verdad, 100 por ciento sin gluten, para que comas tranquilo y sin resignar sabor. Y ahí el Nino Bergese no se entiende por afuera. Se entiende por adentro. El relleno es todo. Tiene que ser suave, pero con estructura. Cremoso, pero firme. Que aguante la masa y al mismo tiempo se derrita cuando lo mordés. Yo lo hago con ricotta bien fresca, trabajada hasta punto crema. Le sumo queso rallado, espinaca cocida con poquísima agua y picada al cuchillo, huevo, y apenas nuez moscada. Nada raro. Nada de maquillaje. La diferencia está en la mano. En cómo lo mezclás. En no apurarlo. En buscar esa textura aireada que parece fácil, pero no perdona. Si el relleno quedó perfecto, el resto es casi un trámite.
