Full Recipe Below. ๐Ÿ†๐ŸคŒ For The Caponata ๏ฟฝ1 large (or 2 medium) eggplant, cubed 1/4 cup olive oil, divided 1 medium Spanish onion, finely chopped 3 celery stalks, finely chopped 1 red bell pepper, finely chopped 1/2 teaspoon dried red chili flakes 3 cloves garlic, minced 1/3 cup dry white wine 1 cup crushed tomatoes 2 tablespoons capers 1/4 cup green olives 1/4 cup golden raisins 1 1/2 tablespoons honey 2 tablespoons red wine vinegar 1 bay leaf 2 tablespoons minced basil leaves, plus more for garnish 2 tablespoons minced flat-leaf parsley Juice of 1/2 lemon Sea salt and cracked black pepper Toasted bread, to serve Preheat an oven to 400 degrees F and line a baking sheet with parchment paper. Add the eggplant to the baking sheet, drizzle over 3 tablespoons of the olive oil, season well with sea salt, and toss to mix. Transfer to the oven and cook until crispy and golden, turning half way through, for about 25-30 minutes. Remove and set aside. Heat a skillet over medium-heat and add the remaining oil. Go in with your onion, celery, and bell pepper, season with a pinch of salt, and cook until the veggies are softened, about 6 - 8 minutes. Add the garlic and chili flakes and cook for 45 seconds, stirring, then add the wine and cook until almost entirely reduced. Add the tomatoes, capers, olives, raisins, honey, red wine vinegar, and bay leaf, season with salt, then let blip away until beautifully thickened, about 8 - 10 minutes. Remove from the heat, take out the bay leaf, and stir in the eggplant. Add the basil, parsley, lemon, and then season with salt and pepper to taste. Transfer to a serving dish, and serve warm or cold with crusty toasted bread. Delicious!

This also just makes my apartment smell like all those warm Fall flavors ๐Ÿ I love topping it in the morning with nut and walnuts. Recipe from Running on Veggies cookbook. Have you tried it yet?? Recipe 2 teaspoons coconut oil, for greasing 2 small tart red apples, such as honeycrisp, peeled, and small dice 1 lemon, juiced 1 (15-ounce) can unsweetened pumpkin puree 2 large eggs, beaten 2 cups unsweetened nut milk 1 teaspoon ground cinnamon ยผ teaspoon ground nutmeg ยผ teaspoon ground cloves Pinch of sea salt 1 cup quinoa, rinsed 1/3 cup dried Turkish figs, chopped, plus additional chopped to garnish ยฝ cup chopped toasted pecans, to garnish Preheat the oven to 350ยบF. Lightly grease a 9x9-inch baking dish with coconut oil. In a small bowl, toss the apples in lemon juice and set aside. In a large bowl, whisk the pumpkin puree, eggs, nut milk, cinnamon, nutmeg, cloves, and salt together. Fold the apples into the mixture. Place the rinsed quinoa into the bottom of the baking dish and sprinkle with figs. Top with the pumpkin puree mixture. Bake for 45 to 50 minutes, or until the top is set. Remove and allow to cool for 10 minutes. Garnish with additional chopped figs and toasted pecans.
