CHPart one of three dinners with one rotisserie chicken! Chicken pesto pasta - my favourite dinner to make at the end of the week!
To make it just fry up any leftover veggies in your fridge - I used broccolini, cherry tomatoes and mushrooms, 1/2 a red onion and of course my go to for easy cooking @gourmetgarden_aus garlic paste 🙌 add your shredded rotisserie chicken, your favourite pesto - honestly mine is just the @woolworths_au brand, it tastes so yum! (To get all the sauce I just top up the jar with water and give it a shake - about 1/3 full - and add it to the pan). Then add your pasta after cooking per the packet instructions! I used 1.5 packets of @sanremopasta pulse pasta and we even had leftovers for lunch!

UPSimple is the name of the game!
I actually found a tikka masala recipe that I liked, but it still had too many ingredients for me.
So instead, I ventured off and found these two things together that worked so well. One thing that I have added in the past, which I forgot to do this time around was add fresh squeezed lemon juice to the marinade, which adds an extra zest and brings out even more of the flavor.
The tikka masala sauce is from Trader Joe’s and I just used plain Greek yogurt. Make sure to add in some extra spices if you’d like. Cooked in air fryer where you get a nice burnt crisp outer layer that is so delicious.
I actually paired this one with Trader Joe’s vegetable fried rice, which made this entire dinner easy and effortless, yet still delicious and hits all my macros.
