EYDid you know? India consumes more than 50% of the world’s Hing but it’s not cultivated in India and is fully imported from countries like Afghanistan, Uzbekistan, Iran.
Asafoetida/Hing/Kayam/Perungayam is a resin extracted from the roots of the Ferula plant. It has a lot of health benefits and is used as medicine in Ayurveda to treat a lot of diseases. However, it’s important to note that it’s a negative pranic food and best to be had in minimal quantities.
The store bought Hing is full of additives - wheat, maida, palm oil, binding agents and gum. Instead of relying on these, make your own hing powder. Buy hing blocks which are pure or have lesser quantity of wheat it in (blocks usually have 10-20% wheat v/s powder which is 60-70% wheat or maida). The key is to always check ingredients before buying!

PRHow to make Asafoetida(Hing/ Perungayam) powder at home, store katti perungayam(compounded hing), And use them in cooking? Perungayam Hing has a major role in Indian cuisine. Tadka with hing and then pouring them on sambar, rasam & chutneys, the whole house smells divine.
The katti(compounded) Perungayam in idli podi, and sambar podi, enhances the dish’s flavor. we use hing cakes in some recipes and hing powder for some, let me share here both methods and storing as well.
📝How to make hing powder & store it?
🌺Take compounded Hing, roast them in the oven(1 min) or kadai, then powder it. Keep the powder in an airtight container, use a dry spoon for taking the hing powder.
📝compounded hing storage?
🌺Cut the hing into small pieces(if it is hard, keep it on a hot pressure cooker for sometime, it will become soft) and then coat them with rice flour and then store them in masala dabba. If you want to store the whole hing, keep it chilly inside and wrap with plastic. It will be soft & peelable for a long time.
📝How to use it?
🔥Always add it as the first ingredient and roast it. Should not add hing at the final stage.
🔥A generous pinch is always good but not more than that.
🔥Don’t consume raw hing.
🔥We can drop hing in spice & pulses storage containers to prevent them from insects & pests.
