Here is a quick and easy blackened chicken breast recipe you can try yourself Pat your chicken breast dry and then lightly coat with oil. Season with salt and blackening seasoning (smoked paprika, cayenne, garlic powder, onion powder, thyme, oregano, black pepper, brown sugar). Heat a cast iron skillet and add your oil. Sear the chicken for 3–4 minutes, then flip it and cook for 1 minute. Add butter and baste before putting the cast iron into the oven for 5-7 minutes, depending on the thickness, at 375. Rest. Remove the skin from the chicken breast (it will go soft & rubbery) 2. Season all over with salt & pepper 3. Vacuum seal & sous vide at 58c for 3 hrs (for chicken breast to be pasteurized at 58c it needs to hold temp for at least 70 mins) 4. Sear in a pan with butter & aromatics (60-90 seconds maximum) 5. It’s easy to overcook, or end up with something dry and flavorless. That said, every inch can be juicy and full of flavor. Half the trick is probably already in your fridge: grab the juice from something pickling, it adds tang and depth without extra effort. Pan-sear to a golden crust, then finish with ghee (clarified butter) for that glossy, restaurant-level finish. Preheat oven to 350°F. 2. Poke small holes in the chicken breasts with a fork so the seasoning can soak in. 3. Season both sides of the chicken with: salt, pepper, onion powder, garlic powder, paprika, crushed red pepper, Weber Kick’N Chicken seasoning, garlic herb seasoning, and lemon pepper seasoning. 4. Heat a skillet over medium-high heat and sear the chicken for about 7 minutes on each side. 5. Transfer the chicken to an oven-safe baking pan. 6. ✨Brined & Grilled Chicken Breasts✨ You want juicy chicken breasts? You need to try brining them! What is brining? It’s simply soaking a cut of meat in a salt water solution. Sometimes for extra flavor, you might add other ingredients, like sugar, herbs, or spices. All you really need for a brine is salt and water though. The meats that you’re soaking absorb the brine,making them more moist and juicy. It’s best if you flatten the chicken breasts out to an even thickness. If the chicken breast has a consistent thickness, it will cook more evenly. Flattening the chicken breasts a little bit also means that they won’t be on the heat for as long. Also, any brine you use will be able to penetrate the chicken more quickly. Brine for 1-2 hrs if you can otherwise even putting them into the brine for as short a time as 30 min will help. It won’t penetrate all the way through, but it will get the outside, and that is the part of the chicken breast that is most likely to dry out. Grilled, pan seared or baked, your chicken breasts will be juicy & delicious! Here’s the BRINE recipe: 4 cups of cold water 1.5 tbsp of fine sea salt 4-6 chicken breasts, flattened to an even thickness (Other optional additions: herbs,spices,sugar,garlic) In a medium-sized bowl, mix together the water and salt until the salt is fully dissolved, then add the chicken breasts. All of the chicken should be submerged. If not, add more brine mixture or use a narrower bowl. Cover the bowl with plastic wrap or a lid and put it in the fridge for 1-2 hrs for flattened chicken breasts, but even 30 min will have an effect. Remove from water, pat dry with paper towels, drizzle with olive oil and season LIGHTLY as you wish . I seasoned mine with garlic & onion powder, oregano and a little salt. If grilling, make sure to oil your grill grates and grill chicken on med heat. Once ready, cover with foil and rest 5 min before slicing. So delicious, so juicy!
