Start with softened butter • Not melted, not cold—soft enough to press with your finger. • If it’s too soft or greasy, your mixture won’t hold air. 2. Add your sugar • Granulated sugar = more structure (slightly crisp texture) • Brown sugar = more moisture and softness 3. Beat until light & fluffy • Use a mixer on medium speed for about 3–5 minutes ( I do mines for 10 mins ). • The mixture should turn pale, creamy, and slightly fluffy • You’re adding air into the batter—that’s key for rise! 4. Heres the difference… I used to think vanilla was v blah. Like why bother. Have since been converted, a really good salted vanilla buttercream in a belgian cocoa sponge is 👌🏻👌🏻👌🏻 As far as flavouring goes there are few different forms of vanilla - pod, paste, essence, extract. Can be a bit confusing so here’s a quick breakdown of the difference between the two most common 😃 EXTRACT - Natural product - Contains real vanilla - More concentrated flavour ESSENCE - Synthetic product - Minimal or no actual vanilla! - Less concentrated flavour Where best to use ❓ - Extract: buttercream, ice cream - Essence: sponge, cookies What if I only have essence ❓ - Totally fine to use essence, won’t affect structure. But cos it’s not as concentrated, you need to double the amount. So if the recipe calls for one teaspoon of extract, use two teaspoons of essence ❎2️⃣ The really good stuff can cost a fortune but it’s worth it for buttercream! Here is the recipe for super silky ingredient buttercream that is not as sweet as American Buttercream, tastes like Swiss meringue buttercream but eggless! This creamy melt in the mouth buttercream is traditionally known as Russian buttercream and here is the recipe ✅ Ingredients: -1 cup (227g) Unsalted Butter: Must be softened to room temperature (soft but not melty). -1 can (14 oz / 397g) Sweetened Condensed Milk -1 tsp Vanilla Extract: For flavor (optional but recommended). -1/4 tsp Salt: optional to balance sweetness ✅ Method: 1. Whip the Butter: Beat on high speed for 5-8 minutes. The butter should increase in volume and turn nearly white, becoming light and fluffy. 2. Add Condensed Milk: Reduce the mixer to medium speed. Slowly add the condensed milk in small portions (about 1/3 of the can at a time), beating well after each addition to ensure it is fully incorporated before adding more. 3. Add the vanilla or any flavouring of your choice . Continue to whip on high speed for another 1-2 minutes until the mixture is thick, glossy, and smooth. Hope you try it soon! I post this vanilla bean whipped ganache a lot… and honestly, it makes sense. Last year alone, I made over 100 litres of this recipe. It’s the filling I use the most because it’s light, creamy and incredibly versatile across cakes, cake jars and desserts. Here’s the recipe 👇🏾 ✨ Vanilla Bean Whipped Ganache Ingredients • 200 g white chocolate • 100 ml whipping cream (to heat) • 190 ml cold whipping cream • 1 tbsp vanilla bean paste (or 1 vanilla pod) • 1 tbsp vanilla extract (optional) Method 1. Heat 100 ml cream with vanilla and infuse 30 min. 2. Melt white chocolate gently. 3. Reheat cream until just simmering. 4. Emulsify into chocolate in 3 additions. 5. Add cold cream and mix smooth. 6. Chill minimum 3 hours (overnight best). 7. Whip on low–medium speed until the ganache increases in volume. This recipe is also the base for many flavours I teach inside my Whipped Ganache Mastery eBook. The detailed free off of the recipe with troubleshooting tips is available on my website.
