How to make Idly/dosa batter without a traditional wet mixer. After many requests, i finally got this video together & now posting it for you. Here’s some simple steps of how you can ferment a dosa/idly batter during winter for all those living abroad from home. Don’t forget to LIKE, SAVE, SHARE the reel and FOLLOW @shadi_faleel for more easy recipes. 1. Add a pinch of baking soda & leave it over 12 to 14 hours near the radiator/heater. 2. Turn on the light & leave it in the oven for 8 to 10 hours (sometimes 12 hours) 3. Place it your instantpot/crockpot or any multi pressure cooker which has a yoghurt option for 12 hours. It is a challenging task but personally I prefer option no 2. P.S if you don’t have a food processor you can also use the dry/small attachment of your regular blender to blend the idly rice & urad dhal. Add not more than 1 or two tbsp of cold water or two ice cubes while blending urad dhal & it should turn out fluffy cloudy texture. And for rice batter you can add until 1/3 to 1/2 cup of water while blending into a paste. Traditional Treasures : Idly Dosa Batter. Accidentally one day when my maid was on long leave, I soaked for idly batter the previous night to save time in morning. To avoid urad dal from over soaking( usually I soak for 3 hrs) I thought to keeping it fridge. Thought the idlys may not turn out good because of this. But to my surprise the urad dal raised to the brim of grinder while grinding and idly was so soft. So started following that from then. Over years, a few things I learnt in making idly/ dosa batter will be useful to you all. I always had the habit of grinding batter with ice cold water to avoid the heat from grinder while grinding. Will sum up The tips in end! Check out. Ingredients: Idly rice- 4 Cups White while Urad dal- 1 Cup Fenugreek Seeds- 1 tablespoon Salt- 1 tablespoon Water. Tips: Wash and soak urad dal and idly rice for 6-8 hrs. Keep the urad in fridge while soaking. Use ice water for blending. In a grinder add soaked urad dal and add water after its coarsly ground. Grind it till the batter fluffs up and becomes light. Remove the batter. Now add water to grinder, add soaked fenugreek seeds with water followed by rice. Grind with water to a slight coarse texture. Add it to previously ground urad dal batter. Add salt and mix well using hands , which enhances the fermentation process. Let it ferment for 8-10 hrs. Mix the batter well and make idly or dosai’s. Try i! Tips: Refrigerate urad dal while soaking. Use ice cold water for grinding. Use fenugreek. Let the batter ferment nicely for 8-10 hrs. Idli are steamed fluffy rice ‘cakes’ that are made from a fermented rice and lentil batter and are commonly paired with a sambar & coconut chutney. Although usually served for breakfast, they also make a fantastic lunch & dinner! Besides their rich flavour, the fermentation increases the availability of amino acids and makes the carbohydrates and proteins in the batter easier to digest, which gives idli their highly nutritious reputation. This can help maintain an ideal fermentation temperature. 6) Check the batter periodically to ensure it’s fermenting properly. This process may take longer in colder temperatures, so be patient. 7) Once the batter has fermented and doubled in volume, remove it from the oven. It should have a slightly tangy aroma. Remember to monitor the batter regularly to avoid over-fermentation.
