A highly consolidated processing system means a small number of companies control a large share of how beef moves from ranch to retail. Tyson. JBS. Cargill. National Beef. Some are publicly traded. Some are family-controlled. Some are headquartered overseas. When processing is concentrated, pricing power becomes concentrated too. The rancher doesn’t set the grocery price. According to USDA statistics, approximately 80,000 head of cattle are slaughtered every day in the United States for beef production; the average live weight of a cow is about 1,100 pounds, the usable beef yield per cow is roughly 440–550 pounds, meaning the U.S. produces around 44 million pounds of beef per day. It may seem that the numbers add up. But this is an illusion. Those 44 million pounds include everything: premium steaks for restaurants, meat for supermarkets, exports, and government procurement.
