It’s just hit 20 degrees in the UK which means lemon cakes are in, and this one doesn’t disappoint 🍋 It’s moist, light and decadent and perfect for a picnic gathering✨ The recipe is below! #lemoncake #summer #heatwave #lemoncakerecipe #cakerecipe #instacakes #lemon #lemon🍋 #easyrecipe #recipeinspo #lemoncake🍋 #uk INGREDIENTS For the cake: 350g unsalted butter, softened 350g caster sugar Zest 1 lemon 1 1/2 tbsp lemon extract 6 medium eggs 350g self raising flour 1 tsp baking powder For the buttercream: 6 large egg whites 500g caster sugar 600g unsalted butter, softened 1 tbsp lemon extract Mint leaves, to finish METHOD: 1.Preheat the oven to 170c and line 3 x 7 inch cake tins with parchment paper. In the bowl of a stand mixer, beat the butter, sugar, lemon zest and extract until light and fluffy. Add the eggs one by one, adding a tbsp of flour if it begins to split. Fold in the flour and baking powder before transferring evenly between the tins. Bake for 35 minutes. 2.Whist baking, make the buttercream. Over a Bain Marie, whisk the egg whites and sugar until the sugar has dissolved. Once dissolved (about 10 mins) whip until stiff peaks form, before adding the soft butter a tablespoon at a time. 3.Next, stack the cake, filling evenly with the lemon buttercream. lemon curd in the centre. 4.Crumb coat the cake by using a small amount of the buttercream to lock in the crumbs before refrigerating for an hour and finishing with the final coat. Decorate with more buttercream to form lemon shapes and finish with mint leaves. Slice, serve and enjoy!
