MAGARLIC + GINGER PREP 🧄🫚 my favorite prep of all time since garlic is the most used ingredient in daily cooking. Ramadan Series • Prep Week episode 3 of 30.
The ginger + garlic is nothing new around here- we do this all year round but it’s even better for Ramadan Prep week. You can freeze these, or if you use as much as i do- jar them up between layers of oil (i use avocado oil 🥑) and refrigerate. This is good for weeks if using a clean spoon each time and top with more oil as needed.
🧄GARLIC: into a processor until you reach the consistency you like (minced or a paste)- i don’t add any oil in this since i prefer a mince.
-to the bottom of the jar you’re storing it in add oil, top with garlic, midway add more garlic, and continue the layers until you get to the top- top with oil. Close and refrigerate.
🫚GINGER: same process as above, no oil in the processor. I do one jar layered with oil and one jar without. We actually don’t use too much ginger in our cooking but it lasts a long time and ready when we need. The jar without the oil is mainly for adding it to tea if needed for colds/flus.

BRSimple & seasonal 💚 Romanesco Steaks with chimichurri, yogurt and pomegranate 💚
INGREDIENTS (serves 2–3)
• 1 romanesco
• ½ cup fresh parsley
• ¼ cup fresh oregano
• 3 tbsp red wine vinegar
• 4 cloves garlic
• 1 tsp crushed red pepper
• ½ tsp salt
• black pepper, to taste
• ⅓ cup EVOO
• Greek yogurt and a couple spoonfuls of pomegranate arils as an optional garnish
INSTRUCTIONS
• Preheat oven to 375* F. Rinse produce
• Cut Romanesco into about 1/2” slices
• Gather fresh parsley and oregano leaves
• Prep 4 garlic cloves. In a food processor
• Place herbs, garlic, crushed red pepper, red wine vinegar, salt and pepper – then chop until it’s a saucy consistency
• Add chimichurri and olive oil to a bowl then stir.
• Place Romanesco slices on a baking sheet with parchment paper. Slather both sides in chimichurri then season with salt.
• Bake for about 12 minutes, take out and flip, then bake another 12 minutes
• Prep a plate with a layer of Greek yogurt
• Place Romanesco steaks on top, drizzle with more chimichurri, salt and pomegranate arils.
