There a bunch of tricks to making yummy japchae: My mom told me you need to aerate the noodles while cooking them, and even add a bit of cold water to the boiling water here and there to keep them chewy. You definitely need to saute the veggies one by one instead of together. This way you can truly taste all the different flavors. I also like to “filet” my bell peppers so they are really like “matchsticks.” I don’t like it when the peppers are too thick—it tastes and looks clunky and japchae is meant to be served in royal palaces. I don’t like to cook my noodles in the sauce as that will result in soggy overcooked noodles. The magic to japchae is keeping those noodles bouncy. Another trick I like to use is adding a bit of the water the noodles were cooked in to the sauce before stirring vigorously to achieve that lovely emulsification. Also, use good sesame oil, since it is the primary flavor of the sauce. If you can, try and get some from a Korean grocery store. Sesame oil is like extra virgin olive oil. This also reheats super well & tastes EVEN better the next day, so it’s perfect for meal prepping!😋🍜💫 Spicy Japchae Recipe: Japchae Ingredients: -7 oz Korean potato starch noodles -1 carrot (sliced into matchsticks) -½ yellow onion (sliced) -2 scallions (cut into 3 inch slices) -½ lb thinly sliced beef -9 shiitake mushrooms (sliced) -3 cups fresh spinach -1 tsp salt -2 tbsps sesame oil -1.5 tbsps gochugaru -neutral oil Sauce: -¼ cup soy sauce -3 tbsps brown sugar or honey -2 tbsps sesame oil -3 cloves minced garlic -1 tbsp roasted sesame seeds -¼ cup black pepper 1. Whisk your sauce ingredients together. 2. Boil your Korean potato starch noodles for 8 minutes in a shallow sauté pan. Then drain them, & rinse them with cold water. Pour your noodles into a big bowl. 3. Mix 3 tbsps of the sauce into your noodles. Set aside. 4. In the same sauté pan, bring 3 cups of water to a boil, and add your spinach in there for just 15 seconds, blanching them. Drain them, & squeeze as much water out of them as possible. Place the spinach into a small bowl, & add 1 tsp of salt to it. 5. Oil the sauté pan with 2 tbsps of sesame oil over low heat. Add in your noodles, & mix in gochugaru. 6. Remove noodles from the pan, and place them back into the bowl. 7. Add the cooked spinach to the noodle bowl. 8. Add more oil to the pan, and pour in your carrots, yellow onions, and scallions. Sauté for 5 minutes on medium heat. Remove from the pan, & pour into the noodle bowl. 9. Drizzle more oil into the pan, & pour in shiitake mushrooms, sliced beef, & 3 tbsps of the sauce. Sauté for about 5 minutes until the beef is fully cooked. Pour cooked mushrooms and beef into the noodle bowl. 10. Pour the rest of the sauce into the noodle bowl, & mix everything together. Ingredients - Dangmyeon (Korean sweet potato noodles) - Mushrooms - Carrot - Bell pepper - Onion (half) - Spinach - 2 eggs (for omelette) - Salt & black pepper Japchae Sauce - 1.5 oz soy sauce (3 tbsp) - 1 oz sugar (2 tbsp) - 0.75 oz sesame oil (1½ tbsp) - Minced garlic - Black pepper - 2-3 tbsp water or noodle water - Sesame seeds Instructions 1. Prepping is def the longest part! Cut the mushrooms, carrots, bell peppers, and onions vertically for that classic japchae look. 2. Bring a pot of water to a boil and blanch the spinach for ~15 seconds, then rinse with cold water and squeeze out excess moisture. 3. Glossy glass noodles, fresh veggies, and that perfect sesame flavor — better than takeout 😍 Ingredients Main • 400g sweet potato glass noodles • 200g spinach • 2 carrots (julienned) • 1 large or 2 small onions (sliced) • 1 large or 2 small red bell peppers (sliced) • 6–8 shiitake mushrooms (sliced) • 4 garlic cloves (minced) • 3–5 green onions (cut) • 3–4 eggs (optional) Sauce • 6 tbsp soy sauce • 3 tbsp sugar • 2 tbsp sesame oil • 2 tbsp vegetable or avocado oil (for stir-frying) • 2 tsp sesame seeds • Salt & pepper to taste 1️⃣ Cook Noodles Boil noodles 6–7 minutes according to package. Japchae is my favorite Noodle Dish of all time! My good friend @jennacho2 made this for my son so I had to give it a shot! It’s a traditional Korean dish KOREAN JAPCHAE  1 pound dried Korean sweet potato noodles
5 teaspoons sesame oil, divided
2 tablespoon cooking oil
1/2 cup thinly sliced onions
4 carrots, cut into matchsticks
10 cloves garlic, finely minced
5 stalks green onions, cut into 1″ lengths
1 cup mushrooms, thinly sliced (shitake, wood ear) you can rehydrate dried too
1 lb spinach 8 tablespoons soy sauce 8 teaspoons sugar
2 tablespoon sesame seeds Fill a large pot with water and boil. When water is boiling, add the noodles and cook for 6-7 minutes. Immediately drain and rinse with cold water. Toss with only 2 tsp of the sesame oil. Use kitchen shears to cut noodles into shorter pieces, about 8 inches in length. Set aside. Spinach. Boil water. Blanched spinach for 2-3 minutes. Strain. Rinse w/cold water. Squeeze out all liquid. Chop once in half.  Sprinkle with salt, 1 tsp sesame oil. 1/2 tsp salt. Mix well. Set aside. In bowl, mix soy sauce & sugar together. Add the cooking oil to a heated wok on high heat and swirl to coat. When the cooking oil is hot but not smoking, fry onions and carrots, until just softened, about 1 minute. Add the garlic, green onions and mushrooms, fry 30 seconds. Last add in the spinach. Mix to combine.  Dump mixture into a bowl.  Add the soy sauce/sugar mixture and the noodles into the wok on high heat.  Fry 3-4 minutes until the noodles are cooked through.  Dump veggies into the wok, mix well to combine. Cook for another 1-2 minutes. Taste. Turn off heat, toss with sesame seeds and the remaining 1 1/2 tsp of sesame oil. #korean #japchae #mealprep #quickrecipes #momlife

Ingredients: 🍜 1/3 Pack Sweet potato noodles @urbanplatter.in 🥢 2-3 tbsp Soy sauce 🫙Oyster Sauce 🌰 1 tbsp Sesame oil @urbanplatter.in 🍬 1 tbsp Brown sugar 🧄 1 cloves Garlic, finely chopped ⚫ To taste Black pepper, freshly crushed 🛢️ 1 tbsp Cooking oil 🧅 1 medium Onion, chopped 🫑 ½ cup Bell peppers, chopped 🥕 ½ cup Carrots, julienned or sliced 🌼 1 tsp Sesame seeds, for garnish Method: -In a bowl, mix soy sauce, oyster sauce, sesame oil, brown sugar, chopped garlic, and crushed black pepper. -Boil the sweet potato noodles as per package instructions. -Drain and keep aside. -Heat oil in a pan and add onion, bell peppers, and carrots. -Sauté on high heat until lightly browned but still crunchy. -Add the boiled noodles to the pan. -Pour in the prepared sauce and toss well until everything is evenly coated. -Cook for 1–2 minutes on high heat. -Serve hot and finish with sesame seeds. Every Lunar New Year holiday, I basically become a **Japchae factory** 😂 First day, second day, third day… whenever we visit friends’ houses, I make it at least **5–6 times**. This is the recipe I’ve been using for **5 years straight**. The seasoning is perfectly balanced, and the noodles absorb all the flavor — you just keep eating and eating 😆 Best part? Even after storing it in the fridge overnight, when you reheat it in the microwave or a pan, the noodles don’t get soggy. It tastes like you just made it fresh. You must save this recipe — Ingredients * Glass noodles (dangmyeon) **500g** * Pork tenderloin **300g** * 1 yellow bell pepper * 1 red bell pepper * 1 onion * ½ carrot * Shiitake mushrooms * Garlic chives or spinach Noodles Sauce * Soy sauce **8–9 tbsp** * Sugar **6 tbsp** * Cooking oil **4 tbsp** * Water **500ml Meat Marinade * Soy sauce **1 tbsp** * Mirim (cooking wine) **1 tbsp** * Sesame oil **1 tbsp** * Black pepper How to Make 1️⃣ Soak the glass noodles in water for about **30 minutes**. While soaking, slice all the vegetables thinly. 2️⃣ Marinate the sliced pork with the meat seasoning. 3️⃣ Stir-fry the vegetables in an oiled pan with about **3 pinches of salt** until slightly crisp. Stir-fry the pork and shiitake mushrooms until nicely browned. 4️⃣ In a large pot, add water, soy sauce, sugar, and oil. When it starts boiling, add the soaked noodles. 5️⃣ Cook while stirring until the noodles absorb **all the sauce**. 6️⃣ Add in the cooked vegetables and pork. Finish with **2–3 tbsp sesame oil**, plenty of black pepper, and lots of sesame seeds. Mix everything well — done! — It may look like a lot of steps, but once you start, it’s actually simple 😄 If it feels like too much, just cut the recipe in half.
