Wtf is Java rice and where does it come from? 🤷🏻‍♀️ There are two theories: A) It’s rooted in Indonesia’s nasi kuning, a bright yellow rice dish colored with turmeric. B) It’s 100% a Pinoy thing, invented by Aristocrat. Their Java rice is orange. For chicken BBQ purposes, we’re going with B. Think of this as a hack for Aristocrat’s Java rice: no turmeric, ketchup-y sweet, and dotted with ground pork. When what you thought would be your most boring recipe is the one that goes viral….but honestly this Miso Garlic Butter rice deserves it bc it’s pretty dang delicious😂😎 INGREDIENTS 1 ½ cups Japanese Short Grain Rice 2 tbsp Unsalted Butter 4 Garlic Cloves (minced) 1 ½ tbsp White Miso Paste 2 cups Dashi Stock or Chicken broth ½ tbsp Soy Sauce 1 tsp Sesame Oil Toasted White Sesame Seeds (for topping) Sliced Green Onions (for topping) INSTRUCTIONS Soak the rice in cold water for 15 minutes. Drain the water then set the rice aside. Heat a medium sized pot over medium heat. Add in butter and allow it to melt. Mix in the garlic and cook for 30 seconds to 1 minute until fragrant. Add in the miso paste. Stir and cook for about 1 minute then add in the rice. Cook the rice for 2 minutes to toast then mix in the dashi stock, soy sauce, and sesame oil Increase the heat to medium high and bring the mixture to a boil. Decrease the heat to low so that it is simmering. Cover the pot with a lid and cook for 20 minutes until the rice is cooked through and all the liquid has been absorbed. Remove the pot from the heat and fluff the rice with a rice paddle or fork. Top with toasted white sesame seeds and sliced green onions. Have you heard of Java Rice? Its the usual way rice is prepared as the companion to any filipino bbq dish. It has an earthy flavor from the turmeric and annatto, and richness from the garlic and butter. Check out my other video on how to make the bbq! 4 cups cooked jasmine rice (preferably day old) 6 cloves minced garlic 3 tbsp neutral oil 2 tbsp butter 1 tsp annato powder 2 tsp turmeric Optional (diced tomatos/red bell pepper) Green onion for garnish -In a large pan or wok on medium heat, add your oil, garlic and optional veggies. -Cook till garlic has lightly browned and take off the heat (so it wont burn). -Add your turmeric and annatto powder, let it bloom in the hot oil. -Return the pan to heat, add the rice and butter, mix thoroughly until every grain is yellow. -Use a bowl to form the rice and serve! #javarice #rice #filipino #filipinofood #porkbbq #recipe #reelsphilippines #fyp

RICE FROM AROUND THE WORLD 🌍 I’m on a mission to find the world’s best rice dish. This is part 18 and today we’re taking a trip to Kenya to make some Pilau. An easy one pot beef and rice dish infused with aromatic Kenyan spices. Full written recipe below! (4) Stock: 2 tbsp ghee 850g beef shin cubed 3 bay leaves 3 tbsp Kenyan pilau masala (recipe below) Salt to taste 4 small baby potatoes cut into cubes 
Rice: 2 brown onions finely diced 1 cinnamon stick 3 green cardamon pods 2 tbsp garlic/ginger paste 1 tbsp tomato paste 1.5 cups par boiled golden sella basmati rice 3 cups of the beef stock Pilau maasala: (toast whole spices & blend) 1 cinnamon stick 3 tbsp coriander seeds 1 tbsp cumin seeds 8 green cardamon pods 1/2 tbsp fennel seeds 15 cloves 2 bay leaves 1 tbsp black peppercorns 1 tbsp cayenne pepper 1/2 tbsp smoked paprika Pilipili sauce: 1 brown onion diced 1 red pepper diced 1 cup of cherry tomatoes 1/2 tbsp tomato paste 1/2 cup of the beef stock Salt to taste (1) Heat up a large pot on a medium high heat, add the ghee, then sear your beef on each side until brown all over. Add the bay leaves, 1.5l of boiling water, salt to taste & masala. Cover and simmer 1hr 30 minutes. Remove lid, add the potatoes and cook for a further 15 minutes, strain the stock and reserve. (2) For the rice, heat up a large pot on a medium heat. Add the onions, cardamon & cinnamon stick, then cook for 25 minutes until well browned. Add the garlic&ginger paste + tomato paste, then cook for 5 minutes. Add the beef & potatoes, stock and season to taste with salt. Add the rice, cover and cook for 15 minutes on low. Remove from the heat, allow to steam for 20 minutes. Fluff with a fork. (3) For the sauce, heat up a frying pan on a medium heat. Add some ghee, followed by the onions, pepper & tomatoes. Saute for a few minutes, add the tomato paste and cook 5 minutes. Add the stock, then cook for 10 minutes. Finally blend up and season to taste with salt. #comfortfood #rice #kenyanfood #kenya
