📌Kabsa Masala
Grind together:
• ¾ tsp cumin
• ½ tsp fennel
• ½ tsp black pepper
• ¾ tsp coriander seeds
• 4 cardamom pods
• ½ tsp cinnamon powder
• ¾ tsp paprika
• ¾ tsp turmeric
• ¾ tsp red chilli flakes
Set aside.
📌Other Ingredients
• 600 g chicken
• 2½ cups basmati rice (soaked 30 minutes)
• 1 large onion, sliced
• 1 tbsp ginger garlic paste
• ⅓–½ cup homemade tomato sauce
• 1½ tbsp kabsa masala
• 2½ cups hot water
• ⅓–½ cup oil
• 1 bay leaf
• 1 cinnamon stick
• 4–5 black peppercorns
• 2 dried lemons (optional)
• Salt to taste
For the chicken brush masala
• 2 tbsp oil
• 1½ tbsp thick gravy from the pot
• 1 tbsp homemade tomato sauce
• 1 tbsp kabsa masala
• ½ tsp red chilli powder
