Sometimes, doing less is the healthiest choice. @ptal.in ✨ Ingredients: 1 cup diced carrots 1 cup diced green beans 2 tbsp coconut oil 1 tsp mustard seeds 1 tsp turmeric Few curry leaves 2 broken dried red chillies 1/2 cup grated coconut Salt to taste Instructions: Heat coconut oil in a shallow vessel. Add mustard seeds and let them splutter. Add dried red chilies and curry leaves, sautéing for a few seconds. Add the diced carrots and beans, turmeric powder, and salt. Sauté for 2-3 minutes. Add the ground coconut mixture to the veggies and mix well. If it looks too dry, you can add a splash of water. Cover the pan with a lid and cook on low heat for about 5-8 minutes until the vegetable is tender but not mushy. Remove the lid, stir well, and cook for another minute to evaporate any excess moisture. Serve hot as a side with rice and Sambar. Note: Coconut oil is essential for the authentic flavor. Save this post to try it later! 📌 Ingredients: 1 Glass Rice 1/2 Glass Toor Dal 3 Glasses Water (1:2 ratio) 1/4 tbsp Turmeric Powder Salt to taste For Tempering: Oil, Mustard Seeds, Jeera (Cumin), 5-6 Green Chilies, Curry Leaves, Crushed Ginger & Garlic, Pepper, Coriander Leaves. Method: 1️⃣ Pressure Cook: Wash the rice and toor dal. Add them to a cooker with 3 glasses of water, turmeric, and salt. Cook for 3 whistles. 2️⃣ The Tadka: In a pan, heat oil. Add mustard seeds, jeera, green chilies, and curry leaves. Fry well. 3️⃣ Aromatics: Add crushed garlic and ginger to the pan and fry. Finally, add pepper, give it a quick mix, and set aside. 4️⃣ Combine: Open the cooker and smash the cooked rice and dal nicely. 🌿 Avarakkai Poricha Kuzhambu🌿 This can be made with any vegetables like Pumpkins, chow chow, Brinjal, mixed veggies, even legumes can be added along with veggies. And also instead of Coconuts in this, if it’s not available coconut milk can be replaced. Also, instead of black urad dal in this recipe use regular one. Ingredients: Avarakkai- 1 cup Moong dal-4 tablespoon Tamarind- gooseberry size Water-2 cups Turmeric-1/2 tsp Salt- as needed Asafetida-3/4 tsp Coconut oil-1 tbsp Mustard-1/2 tsp Curry leaves- a sprig Fry & grind: Black Urad dal-4 tbsp Red chilies-1&1/2 (increase it to your needs) Pepper corns-3/4 tsp Cumin-1 tsp Grated coconut-1/4 cup Steps: 1. Soak tamarind in luke warm water. And in a vessel add broad beans and moong dal, add turmeric powder and add water as shown in the video. Add the vessel to the instant pot close the lid and seal it. And then set the pressure cooking mode on high for 1 minute. And release manually in 5-8 mins time. If you are using pressure cooker, before the whistle comes turn off the stove. This can be done in microwave and steam cook too. 2. Prepare the fry and grind items. I have added less chilies based on my right now spice level. Please increase according to your taste. Allow it to cool down and grind them to a consistency it’s not too smooth as well coarse. 3. In a pan add oil, tempering ingredients, and the veggie and lentil. Add asafetida and salt. Close the lid and cook for further 5 mins. Then add tamarind water and cover it with lid and cook for 8 mins. Then add the grounded mixture. And don’t boil much as due to coconuts in it. If you feel the consistency is not yet thick, add 1 tablespoon of rice flour to water & make it as thick paste, and add it to the kuzhambu. Serve this hot with rice and ghee. This is a very easing and gut friendly comforting dish, to consume, especially during winter season. There is quite a bit of chatter going on about the wattage needed for cooking with induction. You don't need to zap your food with a lot of watts. It actually reduces control over heating. For this (although this is just enough for 2 ppl only), I've used just 800W for initial heating, 600W for sauteeing and mere 400W for simmering. Takes 15-20 mins tops. Good, slow cooking. Simple Friday night meal. Rice, thokku, and an assortment of @upalaskitchen 's pickles :) There's fried garlic, bellam garlic, pinnama pachadi and brinjal avakkai. Today we made Hitkavare Kaalu Tove — a dish that always brings back memories of home. Hitkavare is made by soaking avarekai overnight and peeling off the skin. The soft inner bean is called hitki bele (also known as chinkavure or hitkavare bele). It’s delicate, flavourful, and very special in Karnataka kitchens. At our home, we usually prepare this tove without adding any dal, keeping it light and simple because avarekai itself is quite rich. After a long time, it felt wonderful to sit down to a plate of this comforting dish. We still have plenty stored in the freezer, so it will slowly appear in many more recipes. Served with hot rice or chapati, it’s a humble meal that instantly takes you back to your hometown kitchen. 🍲 Recipe – Hitkavre Kaalu Thave Ingredients • Hitkavare (peeled avarekalu) • Mustard seeds • Jeera • Hing • Dry red chillies • Fresh coconut (grated) • Green chillies • Ginger • Coriander seeds (dhania) • Lemon • Salt • Water Method 1. Heat a little oil in a kadai. 2. Add mustard seeds, jeera, hing, and red chillies for the tadka. 3. Add the hitki daure and a little water. Cover and cook for a few minutes. 4. In a mixer jar, grind fresh coconut, green chillies, ginger, jeera, and a little dhania into a slightly coarse paste. 5. Add this paste to the cooked hitkavare and mix well. 6. Add some water to reach a tove / bhath-like consistency and cook for a few minutes. 7. Turn off the flame and finish with the juice of one lemon. Serve hot with rice or chapati.
