Dear all - I have been following @kobofermentary for fermentation tips and guidelines. This requires an acquired taste and I am still in the acquisition process :) - roast 1 tbsp mustard seeds and powder it - add chopped 1 raw mango, 1 sliced orange, 1 large sliced lime, ginger and turmeric juliennes, 8-10 sliced green chillies, some chopped celery stalks (optional), 1 small chopped ripe mango - add the mustard powder, 3 tbsp heaped kala namak/ black salt. (Salt is 2% the weight of fruits/vegetables) - add water to the brim of the bottle. - cover with a glass lid or muslin cloth and leave out in the sun for 2-3 days #vegan #plantbased #probiotic #kanji

We all keep promoting kombucha but what about our good old kanji that's a perfect desi Probiotic and is just too Delishaaas if you also drop in some vadas with the kanji. Fermenting time for kanji will vary with the amount of sun in your city and please make sure you properly sterilise the jar you make this in else it might spoil. For cities like Mumbai fermenting will take lesser time and it might be ready under a day and you can shift it to the fridge when it's tangy enough. Come on make some black carrot kanji at home and go desi for your gut and make it happy :) . . Kaali Gajar Kanji Peel 1 kg of Kaali Gajar Cut into batons Add to a sterilised glass jar 2 tsp Black pepper 1/2 tsp Hing 2 tsp Black salt Salt to taste 2.5 tbsp Crushed mustard seeds Boil water and then cool it down. Add about 2lt Mix everything well Cover and ferment it for 2 days

This is a good old traditional recipe passed on from genertions to help maintain a healthy gut. This homemade rice kanji is very simple to make and helps improve our digestive enzymes making our digestive system healthy. It tastes very similar to curd rice but the main difference is the fermentation of cooked rice. To make rice kanji , soak cooked rice overnight in a clay pot. After 12 hours of fermentation , you can eat it first thing in the morning. Adding homemade curds helps increase the good bacteria.
