Then make this! 😌 This is the ultimate shortcut to delicious koftas ! 😋 RECIPE (3-4 servings, 30min prep time) Koftas: -360g smoked tofu or firm tofu, crumbled -2 tbsp tomato paste -1 tbsp soy sauce -a good pinch of salt -1 teaspoon each of paprika and cumin -1/2 tsp each garlic powder, ground coriander -5 tbsp (chickpea) flour Knead well (either in a bowl or straight on the baking tray). Then shape into a log and cut into 8 or 9 koftas. -1 onion, sliced -200g cherry tomatoes Place that on the same tray, drizzle everything with oil and bake in the preheated oven at 200C for 20mins. Mich the tomatoes with salt and parsley after baking. Harissa tahini: -3 Tbsp tahini -2 Tsp harissa (or chili) paste -salt to taste -1 Tbsp lemon juice -1 Tbsp maple syrup Mix well and add water to thin it out. To serve: -flatbread Assemble everything on a flatbread and enjoy! 😉 - BACKBLECH KEBAB wONEders ep. 1🥙

-360 g Räuchertofu oder fester Naturtofu, zerkrümelt
-2 EL Tomatenmark
-1 EL Sojasauce
-eine gute Prise Salz
-je 1 TL Paprikapulver und Kreuzkümmel
-je 1/2 TL Knoblauchpulver, gemahlener Koriander
-5 EL (Kichererbsen-)Mehl Alles gut verkneten (entweder in einer Schüssel oder direkt auf dem Backblech). Dann zu einer Rolle formen und in 8 oder 9 Koftas schneiden.
-1 Zwiebel, in Scheiben
-200 g Cherrytomaten Alles auf dasselbe Blech geben, mit Öl beträufeln und im vorgeheizten Ofen bei 200 °C für 20 Min. backen.
Die Tomaten nach dem Backen mit Salz und Petersilie mischen. Harissa-Tahini:
-3 EL Tahini
-2 TL Harissa- (oder Chili-)Paste
-Salz nach Geschmack
-1 EL Zitronensaft
-1 EL Ahornsirup Alles gut verrühren und Wasser hinzufügen, bis die Sauce cremig ist. Zum Servieren:
-Fladenbrot Alles auf einem Fladenbrot zusammenbauen und genießen! 😉

Spiced Chicken Koftas 🌶️🌱 Serves: 4 Ingredients 500g chicken mince 1 small red onion, very finely chopped or grated 3 garlic cloves, crushed 1 tbsp ginger, finely grated 1 green chilli, finely chopped (optional) ¼ cup fresh coriander, finely chopped ¼ cup fresh mint, finely chopped 1 tsp cumin powder 2 tsp coriander powder 1 tsp garam masala 1 tsp Kashmiri chilli powder (for colour + mild heat) Salt to taste 2 tbsp besan (gram flour) or breadcrumbs 1 egg (slightly beaten) 1 tbsp lemon juice 2 tbsp oil (for cooking) 1 tbsp soy sauce # Method In a large bowl, combine the chicken mince with onion, garlic, ginger, chilli, herbs, spices, besan/breadcrumbs, egg, and lemon juice. Mix really well your hands are best here to help everything bind together. Cover and rest the mixture in the fridge for at least 20–30 minutes. This helps the flavours deepen and makes shaping easier. With slightly damp hands, shape the mixture into small round koftas, similar to meatballs. Heat oil in a pan over medium heat. Cook the koftas in batches, turning gently, until golden brown on all sides and cooked through (about 8–10 minutes). You can also Air-fry these at 180C for 10-12 mins. Turning them over halfway. Rest for a couple of minutes before serving this keeps them juicy. The beef koftas here are the star, loads of Ras El Hanout, coriander, cumin and cinnamon, and that onion keeps everything nicely moist. Chicken Meatballs (Makes around 18-20 medium meatballs) Ingredients: • ½ kg minced meat • 2 small onions (chopped) • 2 small green chillies (chopped) • Some coriander (chopped) • 2 tsp ginger garlic paste • 2 tsp salt • ½ tsp red chilli powder • ½ tsp crushed red chillies • ½ tsp coriander powder • ½ tsp cumin powder • ½ tsp coarsely crushed coriander seeds • 1 egg • 1 bread slice — Instructions: • Wash and strain minced chicken well. • Chop onions and strain out excess water. • In a bowl, mix chicken, onions, green chillies, coriander, ginger garlic paste, and all spices. • Add egg and bread, then knead into a well-combined dough. • Grease hands and roll mixture into small balls. • Use immediately or freeze for later. (Thaw completely before cooking if frozen.) Gravy ingredients: 2 large onions Quarter teaspoon zeera 5-6 black whole pepper balls 4 cloves 1 small cinnamon stick 1 tablespoon ginger garlic paste 3-4 large tomatoes 1 bowl thick yoghurt 1 teaspoon salt 1 teaspoon red chilli powder 1 teaspoon turmeric 1 teaspoon zeera powder 1 teaspoon dhaniya powder A pinch ajwaein Steps: Sauté sliced onions in hot oil until golden brown. Add sabat garam masala and ginger garlic paste and fry in oil for about a minute. Blend together fried onions+tomatoes+yoghurt in a blender. In hot oil, pour the blended paste and cook until oil separates. Add kofta balls and cover for 10 minutes. Add boiled eggs, garnish with fresh coriander! Enjoy!

INGREDIENTS 1 lb ground beef or turkey 1/3 cup breadcrumbs (unseasoned or seasoned) 3 tbsp chopped cilantro 1 egg 2 tsp minced garlic 1/8th tsp salt ¼ tsp cumin ¼ tsp cinnamon 2 tbsp olive oil 8 large pitas or naan Garnish 1 cup each: Chopped tomatoes, chopped cucumbers, hummus and tzatziki DIRECTIONS 1. Place ground beef in a bowl. Add bread crumbs ,cilantro, egg, garlic, onion and salt and mix well. 2. Add cumin and cinnamon, mix to combine. Press mixture out on a baking sheet lined with parchment paper, until about ¼” thick. 3. Sprinkle with olive oil. Bake at 425 F just until meat temperature reaches 155 F. 5. Set oven to broil and cook on middle shelf another minute or so just until slightly more browned. Cut beef into 8 vertical slices. 6. Touch of exotic! - N x ❤️ Middle Eastern Lamb Koftas   KOFTA MEAT: 1 lb / 500 g lamb mince (ground lamb) 1/2 onion , grated 1/4 cup breadcrumbs , preferably panko 2 cloves garlic , crushed 2 tbsp chopped fresh coriander KOFTA SPICES 2 tsp EACH cumin, coriander, paprika 1.5 tsp ground cinnamon 1 tsp cayenne pepper (this is a bit spicy, reduce to taste or leave out) 1 1/2 tsp salt, 1/2 black pepper YOGHURT SAUCE – mix: 1 cup yogurt (Greek or other thick plain), 1 tbsp extra virgin olive oil, 1 clove garlic minced, 1 tsp cumin, 1 tbsp lemon juice, 1/4 tsp salt and pepper each TO SERVE: 8 skewers, 8 flatbreads (small) or 4 large, warmed, Shredded Red Cabbage, Carrot and Mint Salad (below) OR shredded lettuce, tomato and onion slices   1. Grate onion into bowl with standard box grater then add remaining Kofta ingredients and Kofta Spices. Mix well with hands, squidge onto 8 skewers (soak 30 min in water if cooking on grill/BBQ or under broiler/oven grill). 2. SAVE THIS RECIPE 💌 Our new favourite way to cook tofu! These middle-eastern inspired koftas are packed with flavour, easy to freeze, and great for little hands too. Perfect for wrapping, dipping, or loading into bowls on the days you just don’t have time. Find the recipe below ⬇️ Middle Eastern Tofu Koftas Makes: 8 Time: 30 minutes  450g firm tofu  1/2 brown onion, diced  3 garlic cloves crushed and finely chopped  1 1/2 tsp ground cumin 1 tsp sumac 1/2 tsp smoked paprika  1/2 tsp chilli flakes  1 tsp salt 3 tbsp tomato paste 3 tbsp flour  1 cup herbs, chopped 2 tbsp sesame seeds Oil, for frying Method: 
Start by draining the tofu. Wrap it in a clean tea towel or paper towels and press it under a heavy object (like a skillet or books) for roughly 5 minutes to remove excess moisture. Once pressed, crumble the tofu into a large mixing bowl until it resembles fine crumbs. Add the diced onion, crushed garlic, cumin, sumac, smoked paprika, chilli flakes, and salt. Mix well to combine. Stir in the tomato paste and flour, then fold in the chopped herbs. Mix everything together until you have a thick, slightly sticky mixture that holds together when pressed. If it’s too wet, add a little more flour. Using your hands, shape the mixture into small oval koftas (about the size of a golf ball).  Heat a generous amount of oil in a large frying pan over medium heat. Once hot, add the koftas in batches, cooking for 3–4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain any excess oil. We love to top with an extra drizzle of tahini, pomegranate molasses and fresh herbs. The tofu koftas will keep in an airtight container in the fridge for up to 7 days, alternatively they will freeze, uncooked for up to 4 months.
