Finally cooked the laing Lovey’s been requesting 😅 Creamy, mildly spicy for sharing, and comforting as always. Next challenge: bopis 😍 🌶️CREAMY LAING 🍽️serves: 1 50g pork belly (sliced small) ¼ small red onion (thinly sliced) ½ thumb ginger (rough chop) 1 garlic clove (minced) 1¼ tsp bagoong ¾ cup coconut milk 12g dried taro/gabi leaves ¼ cup coconut cream 1 siling labuyo (chopped) 1 siling haba (chopped) ½ tsp fish sauce ¼ tsp sugar 1. In a pot, combine pork, onion, garlic, ginger, bagoong, and coconut milk. Bring to a gentle simmer over medium heat, then lower the heat to low. 2. Check the dried taro leaves for any dirt or debris and spread them on top of the simmering coconut milk. 3. Do not stir. Cover and let it simmer very gently for 20 minutes. 4. Once the leaves have softened, gently mix everything together. Continue cooking on low heat, covered, for 40 minutes or until no longer itchy and you get your desired consistency, stirring occasionally and gently to prevent sticking. 5. Add the coconut cream and chilies. Mix and simmer uncovered for another 15 minutes. 6. Taste and adjust seasoning. Enjoy with rice. 📝Notes: - Taro leaves contain calcium oxalate crystals, which can cause itchiness when released too early. - These crystals are reduced through prolonged, gentle cooking, which is why laing is simmered in coconut milk for a long time. - I suggest checking the dried taro leaves for any dirt or debris before cooking. - I do not soak or boil the leaves in water because water alone can release oxalates without helping mellow the texture or flavor. - Stirring the taro leaves too early, while still dry and stiff, can break the fibers and increase the chance of itchiness, so I only mix once the leaves are fully softened. - I cook laing on the lowest heat because it needs to cook for a long time, and I don’t want the coconut milk to break for a creamier consistency. - 1 hour of cooking is usually enough to remove the itchiness, but I cook it longer to achieve my desired softer texture. - I don’t stir-fry the aromatics because I want a creamy, cohesive sauce. #laing #filipinofood #ulamcravings #recipe #TheLoveyLife

This version is made with kale which is a great alternative if you’re not able to get real dried taro leaves! One of my favorite Filipino dishes is laing, a dish of stewed taro leaves usually with porkand shrimp in a creamy coconut sauce. My version swaps out the difficult to cook dried taro leaves and replaces it with shredded kale. Not only is it easier to find but this dish cooks in half the time of the original. I also had to substitute mushroom bagoong instead of regular bagoong which is a fermented shrimp paste which is banned in the US. This dish still gets a ton of flavor from the diced Thai chilis and if you want to add some fish sauce for seasoning, please do, I kept my version vegan…because health Ingredients 8 oz shredded kale 2 tbsp avocado oil 1 can coconut milk 1/4 cup water 1/2 an onion diced 3-4 garlic cloves minced 1 tbsp minced ginger 2-3 diced Thai chilis 1-2 tbsp bagoong (I used mushroom bagoong) Salt and pepper to taste 1. In a pan over medium heat sauté onion, garlic and Thai chilis, 2-3 minutes. Add in ginger and stir till fragrant. 2. Add in kale in batches. Sauté kale for 3-5 minutes until it begins to wilt. Season with salt and pepper. Add in coconut milk and water. 3. Mix coconut milk and water and add in bagoong. Bring to a boil. Once boiling, cover and reduce heat to low and cook for 10-12 minutes until sauce reduces and kale is tender. 5. Garnish with fried garlic, more Thai chilis and serve over rice! #filipinofoodmonth #laing #kale #kalelaing #foodreels

Smoked Laing 🇵🇭🇵🇭 ⬇️ Laing is a classic filipino dish and I wanted to give it a bbq twist. I substituted out pork belly for @eat.campogrande iberico pork jowl and smoked low and slow. Did you know most taro leaves I use is from Mexico and needs longer time to cook so no itchy throat? Ingredients: 3 cans coconut milk 1 large onion 8 garlic cloves 1 knob ginger 3lbs taro leaves Shrimp paste Miso paste Thai chili pepper Recipe: 1. Brown pork jowl then remove 2. Add in diced onions, garlic, and ginger and sautéed 3. Add back in pork jowl and 2 cans coconut milk and bring to a boil 4. Cut up Thai chili peppers and add in shrimp & miso paste and let simmer 5. Cut up taro leaves and add to pan 6. Add one more can of coconut milk 7. Add into your smoker at 225 degrees for 4 hours to really hit the dish with smoke @masterbuilt while staring every hour 8. Make sure to taste to see if you need to cook the leaves longer than 4 hours #laing #hawaiistagram #filipinofood #filipinocuisine #ibericopork #laulau #veteransday
