Ingredient •Potato 300g •Garlic powder 1/2 teaspoon •Parsley •Salt 1/2 teaspoon •Black pepper a pinch •Paprika powder 1/2 teaspoon •Cornstarch 3 tablespoons (Dip sauce) •Yogurt 100g •Mayonnaise 3 tablespoons •Lemon 2 teaspoon •Paprika powder 1 teaspoon •Chili powder 1/2 teaspoon •Honey 1 teaspoon •Salt a pinch •Parsley If you put them in the freezer for about 30 minutes (while still in the Ziploc bag) before cutting them into thin sticks, they’ll hold their shape better! 🔥Tips to stop them from melting in the oil: 1. Make the dough firm – If the potato mix is too soft or wet, it will fall apart. Add a little more starch/flour if needed. 2. Chill before frying – After shaping, keep them in the fridge or freezer (20–30 min) so they hold their shape. 3. Proper oil temperature – Fry at 170–180°C (340–355°F). If the oil is too low, they will break apart before crisping. ✨ Follow these steps and they won’t melt — they’ll come out nice and crispy! 🔥You can make it in the air fryer too. Just cook at 180°C (350°F) for about 10–15 min, shake halfway, and give them a light oil spray for extra crispiness 😋 🔥you can use flour instead of cornstarch. The texture will be a little less crispy, but it still works. 🧀 JAPANESE LONG CHEESY POTATO FRIES Ultra stretchy • Crispy outside • Soft cheesy inside 🥔 INGREDIENTS Base Dough • Boiled & peeled potatoes – 400 g (≈ 6 medium) • Mozzarella cheese – 400 g (≈ 4 cups, grated) • Cornflour – 32 g (4 tbsp) • Salt – 1 tsp • Garlic powder – ½ tsp • Chili flakes – ½ tsp • Oregano – ½ tsp • Red chili powder – ½ tsp ⸻ Coating • Breadcrumbs – ~400 g (as required) Slurry (Perfect Coating Ratio) • All-purpose flour – 1 cup (120 g) • Water – ¾ to 1 cup (180–240 ml) 👉 Goal: medium consistency (coats the fries, not runny) ⸻ 👨‍🍳 METHOD 1. Make the Dough • In a large bowl, add boiled potatoes and mash completely smooth (no lumps). • Add mozzarella, cornflour, salt, and all seasonings. • Mix and mash until it forms a soft, slightly sticky dough. ⸻ 2. Shape the Fries • Transfer mixture into a piping bag (or ziplock). • Pipe long fries onto a lined tray. • Slightly flatten if you want a classic fry shape. • Freeze for 20-30 minutes until firm. ⸻ 3. Prepare Coating • Mix flour + water to make a smooth slurry (no lumps). • Keep breadcrumbs ready in a tray. ⸻ 4. Double Coating (CRUCIAL 🔥) • Dip frozen fries → slurry → breadcrumbs • Repeat again: slurry → breadcrumbs 👉 This double coating = extra crunch + cheese sealing ⸻ 5. Freeze Again • Freeze coated fries for 20 minutes (Prevents breaking + gives clean shape) ⸻ 6.
