100 g Biscoff-Kekse
140 g Mehl
5 g Backpulver
Später: 80 ml Milch zum Tränken
Lotus-Creme:
350 g Doppelrahmfrischkäse
150 g Schlagsahne
2 TL Vanilleextrakt
50 g Speculoos Cream
Crunch:
250 g Weiße Schokolade
150 g Speculoos Cream
150 g Cornflakes, ungesüßt
1. Biscoff-Boden: Eier, Salz und Zucker 3 Min. dickcremig mixen. Biscoffkekse, Mehl und Backpulver kurz einrühren, Teig in einer 26cm Auflaufform bei 180°C O/U-Hitze für 20 Min. backen. Durchlöchern und mit Milch tränken, danach abkühlen lassen.
2. Lotus-Creme: Frischkäse mit kalter Schlagsahne und Vanille erst langsam mixen, dann mit immer schneller werdender Geschwindigkeit steif mixen, Speculoos-Cream für 10-15 Sek. in der Mikrowelle erwärmen, unter die Frischkäsecreme rühren und auf dem Biscoff-Boden verteilen.
3. Crunch: weißt du Schokolade schmelzen, Speculoos-Cream und Cornflakes dazugeben, vermengen und als Topping verteilen.

Base:
300g Lotus Biscoff biscuits (2½ cups crushed)
150g melted butter (⅔ cup)
Filling:
500g cream cheese, Philadelphia (2 cups)
250ml heavy whipping cream (1 cup)
180g Lotus Biscoff spread (½ cup + 2 tbsp)
100g powdered sugar (¾ cup)
4g agar agar +120ml whole milk (Optional)
1 teaspoon vanilla extract (Optional)
Topping
200g Lotus Biscoff spread (¾ cup)
1. Mix crushed biscuits with melted butter, and chill 30 minutes.
2. Whip the cream. Beat cream cheese with sugar, add Lotus spread + vanilla.
3. Boil milk with agar-agar for 1–2 minutes, then mix into the filling. Add the whipping cream previously whipped. Pour over the base and chill at least 6 hours.
4. Warm the Lotus spread, pour over the cheesecake and chill 30 minutes before serving.

• Crush: Pulse the 240g Lotus Biscoff biscuits in a food processor until they are fine crumbs.
• Mix: Transfer to a bowl and stir in the 90g melted butter until it looks like wet sand.
• Press: Firmly press the mixture into the bottom of a 20cm (8-inch) springform tin. Use the back of a spoon to smooth it out. Pop this in the fridge while you make the filling.
2. The Filling
• Cream: In a large bowl, beat the 500g cream cheese, 250g Biscoff spread, and 30g powdered sugar together until smooth and combined.
• Whip: In a separate bowl, whip the 400ml whipping cream until stiff peaks form.
• Fold: Gently fold the whipped cream into the Biscoff cream cheese mixture. Do this slowly so you don't lose the air—this is what makes it light and fluffy!
• Set: Pour the filling over the biscuit base and smooth the top. Chill in the fridge for at least 6 hours (overnight is best).
3. The Topping
• Melt: Once the cheesecake is fully set, take the remaining 200g Biscoff spread and melt it in the microwave for 20–30 seconds until it's pourable but not hot.
• Pour: Pour the melted spread over the cold cheesecake, tilting the tin to ensure it covers the surface evenly.
• Decorate: If you have any spare biscuits, crumble them around the edges for a professional look.
