5 HELPFUL TIPS WHEN MAKING MACARONS 💪 1. Measure out all the ingredients with a scale. I know how tempting it is to eyeball but, PLEASE USE A SCALE 🫶 your macs will thank you later. 2. The meringue is the most important foundation for a perfect macaron. When mixing the egg whites and sugar together, watch it like a hawk until it gets to stiff peaks. 3. Blitz the almond meal and icing sugar in a food processor. Why do we need to do this you ask? To remove any oils from the almond meal and make it finer, this will help us get smooth shells 😍. Sift the dry ingredients, to make sure its thoroughly mixed and remove any lumpy bits. 4. During the macaronage stage, use the mixer to do couple of mixes before you fold by hand. Your wrist will love you 🫶 5. It's so easy to undermix or overmix the batter, so there are a couple of tests you can do. One way is to pick up the batter with the spatula and let its flow down in the figure 8, once you get to that stage, it's time to stop folding. There are so many tips worth sharing but these are the core tips when making macarons! Should we share other tips ? Gemahlene Mandeln nochmal sehr fein mixen und sieben, so wird die Oberfläche der Macarons schön glatt. 2. Die Eiweißmasse muss richtig steif sein, damit die Schalen nicht hohl werden. 3. Nur Gel- oder Pulverfarben verwenden, weil flüssige Farben verwässern die Masse und ruinieren die Konsistenz. 4. Die Macaronage sollte eine lavaartige Konsistenz haben. Die Masse muss fließen, aber nicht zu dünn sein, sonst verlaufen die Schalen. 5. Backblech umdrehen, so bekommt das Blech weniger direkte Hitze von unten und die Macarons backen gleichmäßiger. 6. Vor dem Backen 5–7 Min. bei 90°C im offenen Ofen trocknen lassen. People like to make macaronage with Italian meringue. It makes the feet smaller and more challenging. It should flow in a continuous ribbon, but not too quickly. 2) If it falls in clumps immediately when the spatula is lifted, mix it again. Add another 20 seconds and see. If it’s not ok, add another 10 seconds. It’s important not to mix it with a nozzle for more than 1.5 minutes. 3) If the meringue is not properly whipped, for example, if it’s too soft, the macaron will likely be liquid. If, on the other hand, it’s whipped too much, it will be difficult to mix and may remain too stiff. 4) IMPORTANT if you mix the macaronage for a long time, it will become liquid in the moment and then immediately stick together, as the fat will start to release from the flour.
