MAPO TOFU UDON 🔥 this one’s for my tofu haters (and lovers). honestly, you’ve just GOT to give this a go 🤤 silken tofu makes the CREAMIEST noodle sauce. extra firm tofu crumbles, crisps up & absorbs flavour so well. AND it’s packed with protein 💪 my full recipe can be found below - enjoy! INGREDIENTS (serves 2) for the topping 1 tbsp coconut / sunflower oil 220g block extra firm tofu, crumbled 1 tsp garlic, minced 1 tsp of ginger, minced 1 tsp black bean paste / sauce 1 tsp fermented broad bean paste (Asian supermarket!) 1 tsp rice wine vinegar for the sauce 300g block silken tofu 1 garlic clove, minced 1 tsp toasted sesame oil 1 tbsp tahini 1 tbsp soy sauce 1-2 tbsp nutritional yeast 2 servings udon noodles To garnish: chilli crisp, spring onion METHOD 1. To make the sauce, get the silken tofu, garlic, sesame oil, tahini, soy sauce and nutritional yeast in a high speed blender. Blend until creamy + smooth, taste for seasoning. Cook your noodles according to packet instructions, reserving a small bowl of cooking water. 2. To make the topping, get your oil in a large non-stick frying pan on a medium-high heat. Once hot, crumble in your extra firm tofu into mince-like pieces. Season with a pinch of salt and crack of pepper, allowing to cook for 3-5 minutes until starting to turn golden-brown. Give the pan a shake + continue to fry the tofu for another 3-5 minutes until golden + crisp all over. 3. Push the tofu to the side, drizzle in another splash of oil, add the garlic + ginger. Fry for 30 seconds until fragrant, being careful not to burn. add the black bean + broad bean paste, stirring for 30s to coat the tofu mince fully. Add a splash of vinegar to clean the bottom of the pan, ## cook off for another 30s. At this point, the mince should be nicely crisp + a deep golden-brown. If your pan has caught, add a splash of water to deglaze! 4. To serve, pour the sauce over the noodles - loosening with a splash of cooking water if required - mix well to coat. Top with the crispy tofu mince, garnish with spring onion + chilli crisp - enjoy! #mapotofu #udon #noodles

MAPO TOFU 🍚🔥 Here’s one of my go to recipes to keep you warm this Winter. It’s fiery, mouth-tingling, and packed with flavour! - 2 tbsp vegetable oil - 1 tbsp minced garlic - 1 tbsp minced ginger - 200g pork mince - 1 tsp ground Sichuan pepper - 1/2 tsp Chinese five spice (optional) - 2 tbsp spicy bean sauce - 2/3 cup chicken stock - Cornstarch slurry (1/4 cup water and 1 tsp cornstarch) - 600g silken tofu, cut into cubes - 1/4 cup chilli oil (recipe on my feed) - 1/2 tsp sesame oil - 1 tsp caster sugar (or to taste) - 2 spring onions, sliced Heat the vegetable oil in a deep saucepan or wok over medium heat. Add the minced garlic and ginger, stirring for 1 minute until fragrant. Turn up the heat and add the pork mince, breaking it into smaller pieces with a wooden spoon or spatula. Cook until golden brown, about 6–8 minutes. Stir in the ground Sichuan pepper, Chinese five spice, and spicy bean sauce and cook for 1 minute. Pour in the chicken stock and stir for 2–3 minutes. Reduce the heat to medium and add the cornstarch slurry while stirring continuously until the sauce thickens. Gently add the silken tofu and chilli oil, tossing carefully to coat. Let it cook for 5 minutes, then stir in the sesame oil, caster sugar (adjust to taste), and half the sliced spring onions. Serve immediately with steamed rice, garnished with the remaining spring onions. 50 30 | S2 EP. 12 MAPO TOFU UDON 💪 We had to do it and they were awesome. 53 Protein | 664 Calories | 21 Fat | 62 Carbs INGREDIENTS FOR 2 300g Lean Beef Mince 1 tbsp Black Bean & Garlic Paste 1 tsp Sichuan Peppercorns 1 tsp MSG 1 tsp Sugar 330g Silken Tofu 1 tbsp Tahini 1 tbsp Soy Sauce 1 tsp Sesame Oil 1 Garlic Clove, Grated 2 tbsp Shaoxing Wine 1 Cucumber 2 Spring Onions 400g Frozen Udon Method To make the sauce, add the silken tofu, tahini, soy sauce, sesame oil and garlic to a blender. Pulse until smooth but don’t overblend as it’ll go quite runny. Set aside. Using a pestle & mortar, grind the sichuan peppercorns with the msg and sugar until you have a coarse powder. Separate the whites and greens of the spring onions. Finely slice the whites into rounds and julienne the greens. Slice the cucumber into thin rounds, stack them up into little piles and cut into strips. Mix the cucumbers and spring onion greens. Add the beef to a hot pan over a medium heat to get some colour, before breaking up. Once coloured, add in the seasonings and cook for a few more minutes. Deglaze with the shaoxing wine. Cook the noodles and plate up. Noodles on the bottom, pour over the sauce, beef on one side, salad on the other. Finish with chilli oil. #5030 #mapotofu #viralrecipe

How to make the Viral Creamy Mapo Tofu Udon ~~ This has been part of my dinner rotation - it’s easy, fast, and so satisfying!! Ingredients - Udon noodles - Silken tofu - Ground pork or ground beef (I used pork) - Garlic, minced - Green onions - Doubanjiang (chili bean paste) - Oyster sauce - Cornstarch - Szechuan peppercorns (optional) - Black vinegar & Chinese cooking wine - Sesame oil - Black pepper Instructions 1. Blend the silken tofu and if you don’t have a blender, you could prob whisk it really well instead! Set aside. 2. Prep the peppercorns (optional) Grind Szechuan peppercorns. Optional, but adds so much flavor. 3. Cook the protein + noodles Heat a pan over medium heat and cook minced garlic and chopped green onions until fragrant. Add ground pork or beef and cook until fully browned! Also, make sure to cook the udon noodles on the side ~ 4. Add the sauce + cornstarch On top of the cooked meat, add: - A good spoonful of doubanjiang - Oyster sauce, black pepper, vinegar - Cornstarch - Optional: Chinese cooking wine & sesame oil & Szechuan peppercorns Stir until the meat is fully coated and the sauce starts to thicken. 5. Assemble Add udon noodles to a bowl, add the pork + the tofu on top, and finish with chopped green onions in the center!! 6. Mix and enjoy! #foodie #easymeals #mapotofu #udon #cooking

MAPO TOFU UDON 🍜 Ou la meilleure recette de nouilles crémeuses et protéinée que t’auras goûté ✨ INGRÉDIENTS POUR 1 PORTION : - 1 sachets de nouilles udon - 1 steak haché 5% - Cebette - 1-2 gousses d’ail - 1 morceau de gingembre - 1 bloc de tofu soyeux (1 bloc fait entre 2 à 4 portions en fonction de comment vous aimez le crémeux et vos apports) - 1 cas de pâte Miso - 1 cac de gochujang - 4 cac de sauce soja - 4 cac de vinaigre de riz - 2 cac de sauce huître - 2 cac de sauce nuoc man - Grines de sésame - Optionnel : Huile pimentée (huile + paprika fumé + chilli flakes) 1. Mixer le tofu soyeux avec la pâte miso. 2. Découper ail, gingembre et cebette 3. Faire revenir le boeuf et l’enrober avec la sauce. 4. Faire cuire les nouilles selon les instructions de paquet. 5.
