Russet potato. 🥔 -Russet potatoes are best for mashed potatoes becasue of their high starch low moisture content, making for a light fluffy mashed. 2.) Hot Milk. 🥛 -The milk must be hot. You will use it to adjust the texture of the mashed, as well as keep it warm to melt the butter. 3.) Cold butter cubes. 🧈 -Butter must be cold to help the potatoes and milk emulsify and not split. 4.) If you missed it, it’s my very first post on my Substack. I wanted to bring that same idea back, but with a little spring upgrade. This version leans slightly brighter with a buttery lemon shallot pan sauce, roasted carrots, and sautéed leeks folded into the mashed potatoes. Ingredients below, full recipe is in my bio! Leeks Unsalted butter, divided (1 for leeks, 4 for potatoes, 2 for sauce) Kosher salt and black pepper Yukon gold potatoes, peeled and cut into large, 2-inch chunks Milk or half-and-half, warmed 4 garlic cloves (2 grated, 2 smashed) Crème fraîche (optional; or sour cream) Carrots, peeled and halved lengthwise Olive oil Bone-in, skin-on chicken thighs Shallot, finely diced Dry white wine (optional) Chicken broth Juice and zest of 1/2 lemon Fresh chives, finely sliced (for serving) #chickenthighs #mashedpotatoes #dinnerideas #roastedcarrots #weeknightdinner

Garlic Butter Salmon with Spinach and Mushrooms in Creamy Sauce—comforting, flavorful, and ready in under 30 minutes: Ingredients 2 salmon fillets 2 tablespoons butter 2 tablespoons olive oil 4 cloves garlic (minced) 1 cup mushrooms (sliced) 2 cups fresh spinach 1 cup cooking cream (or heavy cream) 1/3 cup grated Parmesan cheese 1/2 teaspoon paprika Salt and black pepper to taste 1/2 teaspoon chili flakes (optional) 1 teaspoon lemon juice Optional garnish: Fresh parsley Extra Parmesan Instructions Season salmon fillets with salt, pepper, and paprika. Heat olive oil and 1 tablespoon butter in a pan over medium-high heat. Sear salmon for 3–4 minutes per side until golden and cooked through. Remove and set aside. In the same pan, add remaining butter and garlic. Sauté for 30 seconds until fragrant. Add mushrooms and cook until softened and lightly browned. Stir in spinach and cook until wilted. Pour in cream and bring to a gentle simmer. Add Parmesan cheese, chili flakes, salt, and pepper. Stir until the sauce becomes creamy and smooth. Return salmon to the pan and spoon sauce over it. Finish with lemon juice and let it simmer for 1–2 minutes. INSTANT POT MASHED POTATOES ▢ 3 pounds Russet Potatoes ▢ ½ cup Water ▢ 2 teaspoon Kosher Salt ▢ ¼ cup Butter ▢ 5 ounce Boursin Cheese ▢ ⅓ cup Milk ▢ ½ cup Sour Cream 1) Start by peeling the russet potatoes and cutting them into 4 large pieces. Place the potato chunks into the Instant Pot. Add 1/2 cup of water and sprinkle 2 teaspoons of kosher salt over the potatoes. 2) Secure the lid on the Instant Pot, making sure the valve is set to the sealing position. Select the manual setting and set the timer for 11 minutes on high pressure. 3) Once the cooking time is up, carefully perform a quick release by turning the valve to the venting position. When the pressure has fully released, open the lid. 4) Add the Boursin cheese, milk, and sour cream. Using a potato masher or an electric mixer to mash the potatoes until they reach your desired consistency. For a smother texture, you can use an immersion blender. 5) Serve immediately, garnished with a sprinkle of fresh herbs or an extra pat of butter if desired.
