Cornflake Mini Egg Cake! 🐣 Ramadan Cravings 😭🍫 My adaptation of the lovely @rubybarneybritton creation! Ingredients - (8-10” cake tin, or 30x24cm tray) Cake batter: 2 Large Eggs 230g Sugar 70ml Oil 150ml Sour Cream ( or use Yoghurt / Buttermilk ) 100ml Warm Water 50g Cocoa Powder 2tbsp Instant Coffee 1.5tsp Vanilla Essence 160g Plain Flour 1tsp Baking Powder 1.5tsp Bicarbonate Soda Generous Pinch of Sea Salt Ganache: 130g Milk Chocolate 70g Dark Chocolate 100ml Double Cream 1tbsp Butter Cornflake mix: 150-200g Milk Chocolate 1tsp Coconut Oil 200g Cornflakes 150g (1 pack) Mini Eggs Recipe: - In a bowl, whisk your eggs for 10 minutes until airy - Add your sugar and whisk for another 5 mins until silky - Mix in your oil, sour cream and vanilla - Dissolve your coco powder and coffee into the warm water, mix this until smooth and add to the cake mix - Fold this until fully incorporated - Fold in your dry ingredients and sprinkle generous sea salt - Greaseproof your baking tray and bake your cake at 160 C for 40 mins (if you are using a wider tin, then bake for 30 mins) - In a separate bowl, make the ganache by cutting your chocolate into shards, and pouring hot cream & butter on top - Let this sit for a minute before stirring smooth - For cornflakes, melt your chocolate into the microwave, at 10 second intervals, mix your chocolate fully every 10 seconds to help melt evenly and prevent burning! - Mix this with the cornflakes - Once the cake is baked, cool down until it is warm, lather on your ganache, and pour on your cornflakes - Top with chopped mini eggs and serve warm! - - - #nishatcooks #ramadanrecipes #ramadan #eastereggs cornflakecakes

Mini Egg Crunch Cake 🍰🍫 Some Ramadan sweet treat inspo for you all :) (And yes I ran out of chocolate for the cornflakes πŸ₯²πŸ˜‘) Method (serves 8 slices): 1. Mix the dry ingredients in one bowl (155g self raising flour, 1tsp baking powder, 1/4tsp baking soda, 200g caster sugar, 60g cocoa powder, 1/4tsp salt, 1/2tsp instant coffee). 2. Mix the wet ingredients in another bowl (2 eggs, 165g whole milk, 80g sunflower/veg oil). 3. Add the wet mix to the dry mix and whisk till smooth. Then transfer into an oven dish lined with baking paper. 4. Preheat the oven to 160C. Bake the cake for 20-25mins, till a pierced fork comes out clean. 5. For the ganache: in a bowl, mix 200g chopped milk choocolate, 100g chopped dark chocolate, 300ml double cream. Melt in the microwave in 30sec bursts till fully melted and smooth. 6. Allow the ganache to rest in the fridge/room temp for a few hours to set/harden. 7. Make the syrup: in a small bowl, mix 5tbsp warm milk, 1/2tsp sugar, 1/2tsp instant coffee. 8. Once the cake has cooled, slice the cake in half lengthways. 9. Mix a few handfuls of cornflakes and 200g melted milk chocolate in a bowl. 10. Layer your cake as follows: Cake slice, syrup, chocolate ganache, cake slice, syrup, chocolate ganache, chocolate coated cornflakes, mini eggs. If you haven't tried it yet, this is your sign to make it over the weekend or save it for Eid. 🀎✨ Ingredients 1 small chocolate cake (you can bake your own or buy) ¼ cup milk 250ml fresh cream 300g milk chocolate 1-2 cups cornflakes (add more if needed) Method Step 1 In a pot heat cream and add chocolate. Stir until smooth and glossy to make a ganache. Step 2 Place the chocolate cake on a dessert plate. Drizzle with milk. Step 3 Allow the ganache to cool slightly. Spread a layer of ganache evenly on top of the cake and allow to set Step 4 Mix cornflakes with the balance of the ganache until well coated. Add more cornflakes if needed. Step 5 Top the cake with the chocolate cornflake mixture. Step 6 Serve immediately to avoid the cornflakes turning soggy. Ingredients For the sponge 200g caster sugar 125g full-fat yoghurt (Greek or plain both work) 125g vegetable or other neutral-tasting oil 2 eggs 150g plain flour 30g cocoa powder Β½ tsp baking powder 1 tsp baking soda Pinch of salt 25ml espresso (or very strongly brewed coffee) For the ganache 200g chocolate (dark or milk), chopped 100ml double cream (or heavy cream if in the US) Cornflake topping 130g chocolate (dark or milk), chopped 100g cornflakes 1 tbsp butter, melted (optional) 75–100g mini eggs, crushed Method 1. Preheat the oven to 160Β°C fan. Grease an 8 Γ— 8 inch square tin with butter. 2. Add the sugar, yoghurt, vegetable oil, and eggs to a large bowl. Whisk until well combined. 3. Add the flour, cocoa powder, baking powder, baking soda, and salt. Whisk until evenly combined. 4. Pour in the espresso and whisk again until smooth. 5. Pour the batter into the prepared tin. 6. Bake for 35-40 minutes. A skewer inserted into the centre should come out clean (a few crumbs are fine, but no raw batter). 7. Allow the cake to cool completely. 8. To make the ganache, place the chocolate and cream in a microwave-safe bowl. Microwave in short bursts (about 30 seconds), whisking between each burst, until melted and smooth. 9. For the cornflake topping, place the chocolate and butter in a medium-large bowl and melt either over a bain-marie or in short bursts in the microwave. Add the cornflakes and stir well to coat. It may seem like there isn’t enough chocolate, but keep stirring and it will evenly coat the cornflakes. 10. Crush the mini eggs using a rolling pin (either directly in the bag or in a separate plastic bag). 11. Mini Egg Crunch Cake ⬇️ Did this at the request of my teenage daughter - but I tweaked the recipe. I saw SO many variations of this but its was basically a choc sponge with ganache so I used my OG chocolate traybake recipe (as why fix something thats not broken!?) then topped it with choc cornflake mixture & then the mini eggs for decoration. I’m not a fan of just milk choc alone on desserts, I feel it can get too sickly sweet which is why I combined both dark and milk. Hope you enjoy this as much as I did. Ingredients: For cake: -200g plain flour -300g sugar -70g cocoa powder -5g baking powder -8g bicarbonate of soda (baking soda) -5g salt -60g vegetable/sunflower oil -180g buttermilk / natural plain yoghurt -3 large eggs -200g hot water Ganache: -200g double cream -100g milk chocolate -100g dark chocolate Cornflake crunch: -125g cornflakes -100g milk chocolate -100g dark chocolate Decorate with crushed mini eggs or whatever you fancy. Tray size: 12.5 inch x 9 inch Bake Temp: 160c fan / 180c no fan / gas mark 4 Bake time: 30 - 35 mins Things to note: if you want the ganache to be runny and the cornflakes to stay crunchy then prepare all the elements and decorate it just before serving. You can re-heat the ganache for a few seconds if it does set to make it runny again. If you do store it in the fridge expect the ganache to set and the cornflakes to not be as crunchy Disclaimer: I did not invent this cake idea - but this is my take on it. I am all for giving credit to orginal creators but there seems to be some sort of fight going on as to where it started which I really don’t fancy getting in the middle of. πŸ˜… For me personally, sharing recipes has always been a positive experience, people take ideas and make them their OWN and thats what I LOVE about food - people unleashing their own creativity and i’d like for it to stay that way. Mix it so it doesn’t burn. Once melted add your butter and mix . For the cornflake topping : β€’ 140g cornflakes β€’ 250g milk chocolate β€’ Mix it altogether so the chocolate has covered all the cornflakes.
