ep 2: charred miso-butter cabbage🥬 follow @itsuofficial for more incredible cabbage recipes🌟full recipe below👇 ingredients: 🥬 1 hispi cabbage [or any sturdy variety] 🧈 3 tbsp room temp butter 🥄 1 sachet traditional miso’easy 🧄 1 large clove of garlic 🌶️ itsu crispy’chilli oil 🥣 labneh / thick greek yogurt or your favourite dip 🌿 dill or fav herbs to garnish method: quarter the cabbage and sear on high heat until it develops a deep crust. mix the softed butter with the miso and grate in one clove of garlic. coat the cabbage segments in the butter, covering the grooves and surface. bake in the oven face down at 180c for 25 minutes [flipping halfway] until soft and buttery all the way through. optionally finish on the broil setting. serve with a dollop of labneh or dip of choice & some chilli oil. enjoy! #cabbage #recipe #miso #eatbeautiful

MISO SOY SAUCE BUTTERED NOODLES 🧈 Everyone is adding soy sauce to their buttered noodles, but I added miso too and it was a game changer for savory comfort food 🤤 I used 2x the butter showed in the video, but measure with your heart ⬇️ Ingredients: Pasta Butter Soy sauce Low sodium miso paste Parmesan cheese Pasta water Black pepper To make: 1. Cook pasta and save some pasta water 2. Add butter, a few splashes of pasta water, a splash of soy sauce, and a tsp of miso paste to the cooked pasta, then mix it quickly on low heat to form a buttery sauce 3. Add lots of Parmesan, mix again, top with more Parmesan and black pepper, and enjoy

MISO RAMEN RECIPE Serving size: 2 adults + 2 kids Ingredients: 1/2 lbs of ground pork (you can also use ground chicken or mushrooms) 4 servings of fresh ramen noodles 1 cup of corn 2 cups of bean sprouts 1 sheet of nori, cut into little squares for topping 2 tbsp of minced garlic 1 tsp of minced ginger 2 shallot, chopped 2 tbsp of toasted sesame seeds 2 tbsp of sesame oil 2 tsp Doubanjiang (spicy chili bean paste – optional or you can also buy non-spicy) 6 tbsp of miso 2 tbsp of sugar 2 tbsp of sake or mirin 2 tsp of salt 8 cups of chicken stock / broth 1 scallions, chopped optional: white pepper powder pork belly for topping pickled red ginger Directions Directions: 1. Heat a stock pot over medium heat. Once heated, add sesame oil and add your garlic, ginger, and shallot. Saute until fragrant. 2. Add the ground pork. Cook for 4-5 minutes until it’s no longer pink. 3. Add doubanjiang, miso paste, sugar and sesame seeds and mix them in well with the meat for 2 minutes – make sure not to burn. 4. Add your chicken stock, salt and pepper. Taste and salt more if needed. Boil everything together over medium heat for 5 minutes – add your bean sprouts and corn and boil for 1 more minute until the bean sprouts are cooked. 5. In a separate pot, boil your fresh ramen noodles as per packaging instructions. Plate the noodles in a bowl and pour the hot ramen soup over. Top with your toppings of choice and serve!

Creamy Curry Ramen HACK in 20 minutes Ingredients For the Miso Curry Broth: 2 tbsp oil 6 cloves garlic, minced 2 tsp ginger, minced 1 tbsp lemongrass 2 tbsp curry paste 1 tbsp miso paste 1 can coconut milk (400 mL) 2 cups chicken broth 2 tbsp fish sauce 1 tbsp or more of hot sauce (adjust to your preference) 1 tbsp sugar 4 kaffir lime leaves 2 portions instant ramen noodles For the Beef Topping: 500 g beef mince 1 tbsp oil for cooking 3 cloves garlic, minced 1/2 shallot, minced 2 tsp ginger, minced 2 tsp soy sauce 1 tsp dark soy sauce 1 tbsp fish sauce 1 tsp sugar Toppings: Soft-boiled egg Sliced green onions Sesame seeds Hot sauce Instructions 1. Prepare the Curry Broth Heat 2 tbsp oil in a medium saucepan over medium heat. Sauté garlic, ginger, and lemongrass for 1–2 minutes until fragrant. Stir in curry paste and miso paste, cooking for 1 minute to bloom the spices. Add coconut milk, chicken broth, fish sauce, hot sauce, sugar, and kaffir lime leaves. Bring to a gentle simmer and taste — adjust seasoning if needed. 2. Prepare the Beef Topping Heat 1 tbsp oil in a skillet over medium-high heat. Add garlic, shallot and ginger, sauté 30 seconds until fragrant. Add beef mince and cook until browned, breaking it up with a spatula. Stir in soy sauce, dark soy sauce, fish sauce, and sugar. Cook another 1–2 minutes until the beef is nicely caramelized and flavorful. Taste and adjust seasoning. 3. Cook the Ramen Add the noodles to the simmering broth. Cook according to package instructions (usually 3–5 minutes) until noodles are tender but still springy. 4. Assemble the Bowls Divide the cooked noodles between two bowls. Pour the creamy curry broth over the noodles. Top each bowl with a generous portion of the beef topping. Add toppings like soft-boiled eggs, sliced green onions, nori seaweed and hot sauce. Enjoy!
