Is this a pancake? No. It’s tapioca. Made from cassava starch — an Indigenous Brazilian staple — this is one of the simplest and most satisfying things you can make. Gluten free. No wheat. No mixing bowls. No mess Here’s how I made mine (1 serving): ✨ Tapioca • 70g polvilho doce (tapioca starch) • ~30ml cold water Mix until the starch feels like damp sand. Sift into a hot non-stick pan and let it bind. Flip gently once set. ✨ Filling • 70g cured cheese, grated • ½ banana Fold. Let the cheese melt. Enjoy warm. Simple and perfect for everyday. Are you team sweet, savoury… or both? #DiscoverBrazilianFood #UKFoodScene #IrishFoodCulture #LondonFoodies #DublinEats

Tapioca Starch Ingredients: • 2–3 Yuka • Water Instructions: 1. Peel cassava and remove both the brown skin and pink layer. 2. Cut into small chunks, removing any tough center core. 3. Add to a blender, cover with water, and blend until smooth and milky. 4. Strain through a nut milk bag or cloth into a bowl. Squeeze well. 5. Return the pulp to the blender, add more water, and repeat blending + straining 2–3 times. 6. Let the liquid sit undisturbed for 3–4 hours (or overnight). 7. Carefully pour off the water on top. A white starch will remain at the bottom. 8. Spread the starch on a tray and let dry completely. 9. Once dry, break into a fine powder. Store in an airtight container and use like regular tapioca starch

Tapioca starch is perfect when you want to make, ultra-crispy chips, crisp or crackers. The starch creates a light, airy texture with that satisfying “snap” when you bite into them. 💛 Why tapioca works so well: • Extra crispiness • Neutral flavor – perfect for seasoning • Naturally gluten-free You can season with classics like sea salt, paprika, or chili, but you can also mix in vegetable purées or powders for natural flavor and color 🌈 👉 For more information and recipes, you’ll find everything inside my course. #cookingclasses #cookingvideo #chefs #moleculargastronomy #chef

Modified food starch is a common ingredient derived from starches such as corn, potato, tapioca, or wheat. It is made by physically, enzymatically, or chemically altering the structure of the starch molecules to improve their functionality in food applications. The process of making modified food starch can vary depending on the specific starch source and the desired modification. However, some common chemicals that may be used in the process include: Acids: such as hydrochloric acid, sulfuric acid, or phosphoric acid, are used to break down the starch molecules into smaller fragments, making them more soluble in water. Alkalis: such as sodium hydroxide or potassium hydroxide, increases the pH of the starch slurry and cause the starch molecules to swell and become more water-soluble. Enzymes: such as amylases or proteases are used to break down starch molecules into smaller fragments, which can improve their functionality in food applications. Oxidizing agents: such as hydrogen peroxide or sodium hypochlorite, are used to chemically modify the starch molecules by adding oxygen groups to them. This can improve their thickening, binding, and gelling properties. The result? A highly processed ingredient added to thousands of foods in your grocery store to include - Shredded cheese - Sauces - Bread - Frozen meals - Crackers - Chips - And more The compound effect of consuming ultra-processed ingredients is one of the leading reasons we are so unhealthy. We have to become informed in order to reduce our toxin load.Reading your ingredients could be the key to making better choices for yourself. This carb isn’t sweet… but it spikes your blood sugar worse than sugar. It’s called industrial starch, and it’s hiding in everything from “healthy” protein bars to sauces, soups, shakes, and snacks. These ingredients go by names like: 👉 Maltodextrin 👉 Modified food starch 👉 Corn/tapioca/wheat starch 👉 Modified corn starch They cause inflammation, belly fat storage, cravings, and higher type 2 diabetes risk — all while offering zero nutrition. Want better blood sugar? Start with the ingredient list. If you see these words → back on the shelf it goes.

I made tapioca from scratch guys 🤭 If you ask me whether it’s worth trying I will say yes😂the roasting part is just the hardest🤭 Here’s how I did it I blended the cassava with my @fibismartgadgets blender, strained it and let it sit until the starch separated from the water. I poured out the water and spread the starch on a baking tray, then I dehydrated it in @fibismartgadgets my Airfryer/Dehydrator oven for about 30 minutes it should be half way dry Then I sieved it to get fine particles🙌 After that, I roasted it using a clean new cooking broom 🤭You can sprinkle a little water so it forms small lumps. When it’s fully roasted,I dehydrated it again, stored it in a container, and it was ready to use💯 You can see how it turned out in the last clip (I missed the serving clip 😃 Would you try this? Let me know in the comments😂 Don’t forget to follow @chef_ahr for more amazing recipes
