LA🇫🇷 CORDON BLEU AU MORBIER 🧀

🛒 Ingrédients :
• Côte de veau (ou filet de poulet) 🥩🐔
• Morbier 🧀
• Chapelure 🍞
• 1 œuf 🥚
• Farine 🌾
• Huile de friture 🛢️
• Sel, poivre 🧂
(Sans œuf : mélangez un peu d’eau avec la farine pour remplacer l’œuf)

👨🍳 Préparation :
1️⃣ Ouvrez la côte de veau en portefeuille (ou coupez le filet de poulet en deux).
2️⃣ Déposez une belle tranche de morbier au centre.
3️⃣ Refermez soigneusement pour bien emprisonner le fromage.
4️⃣ Panure :
Farine → œuf → chapelure.
Puis deuxième passage œuf + chapelure pour une croûte bien croustillante.
5️⃣ Faites chauffer l’huile à feu moyen.
Plongez le cordon-bleu et laissez cuire jusqu’à belle coloration dorée.
⚠️ Huile pas trop forte pour éviter de brûler la panure.
6️⃣ Une fois bien doré, terminez la cuisson 10 min au four à 220°C pour que le fromage soit parfaitement fondu.

CHMorbier is a French cow’s-milk cheese from the Jura, the same area that makes Comté. The little line in the middle comes from an old tradition where farmers used evening curd on the bottom, sprinkled a bit of ash to protect it, and added the morning curd on top. Now it’s just part of the look.
Flavor-wise, it’s super approachable : creamy, a little nutty, a tiny bit fruity, and not strong at all. Think “easy, everyday cheese”
We pre-ordered it for a customer and I’m very happy we did. The matching appearance are pure coincidence
