COEver wonder why some macarons have that gorgeous, glassy shine while others look a bit matte?
I’ve found that the secret is actually in how they dry. Instead of letting my macarons rest on the counter for 30 minutes (or even longer when it’s humid), I put them straight into the oven to dry. It’s a small change that makes a huge difference in achieving that high-shine aesthetic I love. Its the HIGH GLOSS look
I also wanted to share a tip for smoother tops: I don’t actually sift my almond flour anymore. I found that using a high-quality, fine-ground flour like Blue Diamond gives me that smooth look without the extra work. It’s been a great way to cut down on waste in while keeping the quality exactly where I want it.

DIPassionfruit Macarons
Do some research on the inter-webs about macarons and you’ll find much has been said about them, with a constant being that they are annoyingly fickle. There are many variables that effect these little A-holes, and unless you have the set up of a professional bakery you cannot control all these variables, but you can with practice learn what works for you in your kitchen, with your oven and your set up, and how to adapt if say, your mixture is a little runny. If macarons are your thing, keep going. Also, whatever happens, no one is going to be unhappy about you serving them a stack of wonky shaped macarons.
Macarons aren’t even one of my favourite things #macarons - they’re too sweet and you can’t get a bang of flavour into the shell itself. What they have though is a beautifully intriguing texture. The shell is crisp on the very outer then squidgy as your bite gets closer to the filled centre so that you’re left with a mouth of chewy, crunchy, creamy. If you then create a delicious flavour on top of this, then I can absolutely understand why many people are mad for them!
I think I’ve only ever made 3 batches of macarons that I felt were great, with these Passionfruit Macarons being one of them. Even then, I baked two batches on a flat cookie tray lined with baking paper, and one final batch on a lipped tray with a silicone mat. The silicon tray batch came out hollow and stuck to the mat. They may have needed longer in the oven, though I left them in for the same amount of time as the baking parchment lined trays. See what I mean? You can do the same thing, change one variable (silicon mat) and, different result.
You’ll see me use almost an entire pipette of yellow food colouring to get a good yellow colour, so note that it pays to invest in a better brand of food colouring like Colour Mill, rather than a cheapie supermarket purchase. There’s sieved passionfruit pulp in the creme patisserie (sturdy custard) filling and it is DELICIOUS! And yes, I will make more.
