SLMSG (Monosodium Glutamate) is simply glutamic acid + sodium.
Glutamic acid is a naturally occurring amino acid; your body makes it, your brain uses it, and your food contains it, esp. aged cheese, soy sauce, meat, tomatoes, mushrooms, and breast milk.
Yes, even breast milk, which means babies are literally born loving it.
MSG is just the crystallised, concentrated form.
The Chinese Restaurant Syndrome Hoax “study” wasn’t even a study; it was just a letter to the editor. No trials. No data.
But the media grabbed it, gave it a racist spin and created fear overnight.
FDA, FSSAI, EFSA, and WHO consider MSG as safe and the fear surrounding it is questionable. (PMID: 31920467).
A tiny minority may be sensitive, but only at very high doses in isolation, and often under stress or when dehydrated.
Bottomline:
✅ MSG is safe in normal quantities.
✅ It’s found in nature and the human body.
✅ No proven link to allergies, brain damage, or cancer.
✅ The fear is media-fueled, not science-based.
✅ The focus should be on overall food quality, not one ingredient.

In 1908, biochemist Kikunae Ikeda identified the compound, which he extracted from seaweed. This flavour, which he labelled as umami, had a unique ability to augment other tastes. Ikeda commercialized MSG under the brand name Ajinomoto; the method of producing MSG has evolved since Ikeda’s time, with the majority now derived from the fermentation of starch, sugar beets, sugar cane, or molasses. This relatively simple compound eventually became a mainstay in the global food industry.
By the 1950s, MSG became a mainstay in the global food industry and was used as a common ingredient in food items, including breakfast cereals, TV dinners, frozen vegetables, condiments, baby food, and canned soup.
A narrative known as the ‘Chinese Restaurant Syndrome’ surfaced in the 1960s after a letter published in the New England Journal of Medicine associated symptoms such as headaches, flushing, and sweating with Chinese food, implicating MSG as the culprit. This led to the vilification of MSG as an ‘unhealthy’ additive, even as it continued to be used widely in various processed Western foods, including chips and fast-food fried chicken.

One of the most demonised ingredients in india is MSG. Again, this reel is not asking you to eat MSG, but use the nature of the scaremongering about it as a lesson in learning to distinguish between science and pseudoscience on social media. The Glutamate in MSG is an amino acid! And amino acids are building blocks of protein. Every source of protein will likely have some glutamate. MSG is simply the sodium salt. When free glutamates hit our tongue, they cause a lingering, savoury sensation that we are familiar with from ramen, chicken soup, seafood or for that matter, tomato based dishes. This is what is called the umami taste.
Yes, there are studies that have shown that in large amounts, free glutamates have some negative effects, but have you read studies on the effects of consuming salt and sugar in large amounts? Have you considered how much more salt and sugar you consume on a daily basis? If you just pause for a moment and ask 2 basic statistical questions
1. How much am i actually eating as part of a balanced, sensible diet?
2. Am I already eating it in various other forms without realising it? Yeast extract, hydrolysed protein and “flavour enhancers” in most food packaging is glutamates! All they are doing is pandering to your fear of that specific term - MSG.
Stop being afraid of food. And stop paying attention to clickbaity scaremongering. All of east Asia eats MSG as a food additive and live 20 years on average longer than most Indians (who end up dying earlier from too much salt and sugar, ironically).
