Pistachio overnight oats! These oats are ridiculously yum. I’m always looking for new ways to pimp up my oats.. and this IS IT! They are made with homemade pistachio butter and topped with a white chocolate shell. Full recipe below 💌 Ingredients [serves 2] 100g oats 2 tbsp chia seeds 2 tbsp honey/ maple (depending on sweetness) 4 tsp pistachio butter (to make this, blend pistachios until a nut butter forms) 250ml almond milk 1/2 tsp matcha 50g white chocolate 2 tbsp chopped pistachios Method In 2 cups/ glasses, mix the oats, chia seeds, honey, 2 tsp pistachio butter, milk and matcha until combined. Add the remaining 2 tsp pistachio butter to the middle of the oats at the top. Add melted white chocolate to each glass, making a chocolate shell and then finish with the chopped pistachios. MAKES: 12 squares INGREDIENTS BASE LAYER 1 cup rolled oats 1 cup almond flour (or ground almonds) 3 tbsp coconut oil, melted 2–3 tbsp maple syrup or honey Pinch of salt ½ tsp pure vanilla extract CARAMEL LAYER ½ cup nut butter (peanut, almond, or cashew) 3–4 tbsp maple syrup or honey Pinch of salt ½ tsp pure vanilla extract CHOCOLATE TOPPING 80 g dark chocolate (70–85%) 1 tsp coconut oil (optional, for glossiness) METHOD 1. Mix the oats, almond flour, melted coconut oil, maple syrup, and a pinch of salt until sticky. 2. Press firmly into a lined loaf tin. Chill in the fridge for 30 minutes. 3. Make the caramel layer by combining the nut butter, maple syrup/honey, vanilla extract and a pinch of salt in a bowl. Pour over the chilled base and spread evenly. Chill in the fridge for another 15–20 minutes. 4. Finish by making the chocolate layer. Melt the dark chocolate with the optional coconut oil and pour over the chilled layers. Use a spatula to even the surface. Sprinkle on a pinch of sea salt and chill in the fridge until it sets (around 20 min). 5. A BROWNIE You can’t say ‘NO’ to!😍 • Gut-friendly & easy to digest • Fiber + healthy fats for steady energy • Supports blood sugar balance • Gluten-free friendly • Mood-lifting chocolate goodness INGREDIENTS ⏲️ • 3 large steamed sweet potato mashed well • 1 cup peanut or almond butter (or allergy-friendly sub) • 1 tsp pure vanilla extract • 6 tbsp flour (oat / white/ almond) • ½ cup mini chocolate chips • ⅔ cup jaggery powder or sugar-free alternative • 6 tbsp cocoa powder • 1½ tsp baking soda • 1/2 tsp salt 2 tbsp cooking oil METHOD 👩🏻‍🍳 1. Preheat oven to 180°C and line a baking pan. 2. In a bowl, mix steamed sweet potato puree, nut butter, vanilla, and jaggery until smooth. 3. Add cocoa powder, oat flour, baking soda, and salt. Mix well and add oil to bind. 4. Fold in chocolate chips or add on top like I did . 5. Spread batter evenly, sprinkle extra chips if using. 6. Bake for 25 minutes until just set. 7. Cool completely for the best fudgy texture. Add peanuts and cacao nibs to a food processor. Blend, stopping to scrape the sides as needed. Continue blending until the mixture goes from crumbly to clumpy to smooth and buttery, which can take 10 to 20 minutes depending on your food processor. 2. Try to use overripe!) • ½ cup nut butter of choice ***Just make sure whatever nut butter you use is well mixed so it’s not separated • 2 cups rolled oats ***Instant oats will NOT hold up as well compared to rolled oats, just sayinn • 1 teaspoon cinnamon • 1 teaspoon vanilla extract • 3 tablespoons maple syrup ***REAL maple syrup, not pancake syrup • 1 cup chocolate chips • ½ teaspoon salt Instructions: • Heat the oven to 350F and line a 9×9 baking pan with parchment paper • Mix everything at once in a mixing bowl • Transfer the mixture to the lined baking pan and flatten it into a flat, even layer • Bake for 18 to 20 minutes or until the edges of the bars are golden • ALLOW TO COOL BEFORE CUTTING!
