Spaghetti Bolognese made with palmini instead of pasta, and my easy homemade marinara sauce! 🍝 Ingredients (4 servings): 2 cans palmini linguine noodles, drained (450 g/ 1 lb) 500 g ground beef (1.1 lb) 1 1/4 cups homemade Marinara Sauce or any sugar-free pasta sauce (300 ml) Optional: 4 tbsp grated Parmesan cheese & fresh basil leaves, to serve Rinse the palmini noodles with water and set aside. The noodles can be eaten as they are or you can place them in a pot with hot water to heat up for 30 to 60 seconds, or heat in a microwave for 30-60 seconds. If you want to warm them up, do that just before serving. Place the ground meat in a cast iron skillet or a non stick pan. (If using cast iron, add a few tablespoons of water.) Cook over a medium-high heat until browned and opaque, for about 10 minutes. Add the marinara and cook to heat through. Take off the heat. Place the marinara flavoured meat in a serving bowl and top with the noodles. Optionally serve each with 1 to 2 tablespoons of grated parmesan and a few basil leaves. To store, refrigerate the meat mixture for up to 4 days or freeze for up to 3 months. Palmini are best prepared fresh — it only takes a minute! Just 6.3 g net carbs and 475 kcal per serving! Heat olive oil in a large skillet over medium heat. Add the cherry tomatoes and cook until softened, stirring occasionally, about 5 minutes. Add the garlic, salt and crushed red pepper, and Italian seasoning and cook until fragrant, 1 more minute. Use the back of a spoon or a potato masher to carefully mash the tomatoes to release their juices. Continue cooking until the tomatoes continue to burst and create a sauce, 5 more minutes. 2. In a pan, heat the olive oil and saute spinach with a pinch of salt for 2 minutes. Transfer into a bowl and add ricotta cheese, 1 egg, salt, and pepper, and mix well to combine. 2. Remove hearts of palm lasagna sheets from the package, rinse, drain, and pat them dry. Place 2 sheets in a crisscross pattern in a muffin pan. 3. Add a tbsp of mozzarella cheese on the bottom of each well, then add meat sauce, cover with half of the lasagna sheet, add a layer of ricotta mixture, and generously top with shredded mozzarella. 4.
