Bánh Patê Sô is the Vietnamese version of a savory meat pie. The flaky, buttery, and golden brown crispy puff pastry and the super juicy and tender meat and pork pate filling are super addicting and create the perfect bite. Bánh Patê Sô are the perfect appetizer or snack to bring to your next potluck or get together with family and friends. It’s so good! No Limit Tip: To save time, just fill up puff pastry rectangles and not use a cup to cut it into circles. You can bake some now to enjoy and freeze the remaining for later 🤗 Ingredients: 3 boxes - Puff Pastry Sheet 2 lbs Ground Pork 1 - Tsp Salt 1 - Tsp Black Pepper 1 - Tsp Sugar 1 - Tsp Chicken Bouillon Powder 1 - Tbsp Oyster Sauce 1 - Whole yellow Onions minced (about 1 cup) 3 - stalks Green Onions (about 1/2 cup) In a large mixing bowl, add all ingredients listed above and mix well. Form into patties (about 40g) Crack one egg into a bowl and lightly whisk it. Let’s make Bánh Patê Sô 🔪 Typically served with a cup of cà phê (vietnamese coffee), these cute little meat pies were essential in my childhood. They’re typically filled with pork but I felt a little fanncaaayyy and used lamb instead. Traditionally, patê sô has a lot less meat and a lot more puff to the pastry but I like mine with more filling. If you want a bigger puff, add less filling :) Ingredients: - 16oz ground protein (either pork, lamb, tofu, chicken or beef should work) -2/3 large onion diced -5 garlic cloves, diced -a handful of green onions, finely chopped -2 tsp red chili flakes (optional) -2-3 tsp salt -4 tsp pepper -4 tsp sugar -2 tbsp fish sauce -2 tsp soy sauce -1 tsp sesame oil For the assembly: -3 eggs, yolk and whites separated -2 sheets of puff pastry Steps: 1. Prep and sauté your aromatics (onion, garlic, red pepper) . Set aside to cool or place in fridge for ~5min 2. Combine the rest of the filling ingredients and mix. Add in your cooled aromatics as well! 3. Separate the egg yolks and whites into two bowls 4. Carefully roll out the puff pastry, and divide into sections. I cut mine into 9 squares (3x3). 5. Stuff those bad bois and crimp edges with fork. 6. Brush crimped edges with egg white and brush the top areas + edges with egg yolk. 7. Bake at 350 for 20-25 mins or until golden. NOTES: -if you choose to use a less “flavorful” type of protein (like tofu or chicken) make sure you adjust your seasonings accordingly! -taste test your filling by placing a tsp of it on a microwave safe plate and cooking it in the microwave for ~15-20 seconds and tasting it Enjoy hot! #vietnam #vietnamesefood #vietnamese #pateso #bánh #banhpateso #ngonqua #lamb #puffpastry #puffpastryrecipes

⬇️ RECIPE BELOW & ON OUR WEBSITE! Bánh patê sô 🇻🇳 If you have a potluck coming up, you NEED to make this recipe! INGREDIENTS (Makes 20) - 1 kg puff pastry dough Filling - 225 g ground pork - 85 g jicama - 85 g smooth chicken or pork liver pâté - 80 g white onion - 3 tsp fish sauce - 1 tsp bouillon - 1 tsp ground black pepper Egg wash - 1 egg - 2 tsp water DIRECTIONS: 1. Thaw puff pastry to room temperature. 2. Peel jicama. 3. Cut jicama into ~3mm thick slices, cut those slices into sticks, then dice the sticks into small cubes. 4. Finely chop white onion. 5. Mix together all the filling ingredients. 6. Preheat oven to 175°C/350°F. 7. Flour counter top or cutting board and lay out the puff pastry. 8. Cut dough into an even number of circle or square pieces, about 7-9cm across. 9. Scoop a heaping tablespoon of filling onto one piece of dough. 10. Use your finger to brush water around the edge of the dough. 11. Place a second piece on top- pressing down gently to line up the edges. 12. Use the tines of a fork to press down and seal the edges. 13. Place completed pastry on a baking tray lined with a silicon mat or parchment paper. 14. Repeat with the rest of the filling/dough. 15. Place your baking tray of patê sô in the freezer for at least 15 minutes. 16. Beat egg and water to make egg-wash. 17. Brush a layer of egg wash on top of the pastries. 18. Bake for about 30 minutes or until they are nice and golden.

I'd like to share a quick and easy recipe to create these little yummy pies using premade puff pastry sheets. Buttery, crispy & flaky outside + perfectly seasoned, juicy, hot inside = Heavenly! Ingredients 👇 Meat Filling 1.5 lbs of Minced Pork 100g of Pate 3 tsp of Sugar 1/4 tsp of Salt 1 tbsp of Oyster Sauce 2 tsps of Black Pepper 1 tsp of Corn Starch 1 Tbsp of Butter 🧈 1/2 Large Onion 🧅 1 tsp of Minced Garlic Pateso Shell 2 box of frozen puff pastry (cut into square shapes & can make 18 pies) 1-2 Eggs (separate the egg york and egg white) Instruction Add minced pork, pate, minced garlic, onion, oyster sauce, sugar, salt, black pepper, cornstarch, and butter into the a bowl. Mix all ingredients about 2-3 mins and set it aside. After that, cut the puff pastry sheets into square shapes, and add a small scoop of the meat filling onto the center of a pastry sheet. Crack 1 egg and separate the egg white and egg york. Using the egg white to brush it around the edges. Lay another piece of pastry sheet on the top of the filling. Using a fork to press down around the edges. Once it's ready to bake, brush them on the top of each pie with egg york. Banh Pate Chaud Or Pate So is a well loved #Vietnamese savory pastry. It’s one of my hubby’s favorite but I rarely make it despite how simple it is! I use to make it quite often, it’s actually one of my very first recipe I posted on my blog. This is one recipe that vary from people to people because of the filling. I personally like mine with some pork pate for richness. Wood-ear mushroom is also a must because I enjoy the added texture. I used to make mine with grated carrots which add sweetness to it but didn’t do that this morning. Play around with what u like, this is definitely something you can make into your own. By the way, once you baked these you cma freeze them and enjoy them longer! This recipe will make 27 pastries (each box makes 9). Adjust to the quantity you want. Ingredients: 3 boxes of puff pastry melted butter Filling: 1 lb of ground pork 2 tbl pork pate 1/2 cup diced sweet onions 1/2 cup chopped rehydrated wood-ear mushroom 1 tsp salt 2-3 tsp sugar more or less to your liking 1/4 tsp black pepper 1/2 tsp mushroom seasoning 1 tsp corn starch 1. Thaw puff pastry for about an hour. It’s easier to work with when it’s not completely thawed. 2. Combine ingredients for filling. Mold it into patties, a little over tbl of filling if you wanted to keep it consistent. 3. Divide puff pastry into 18 squares. 4. Place filling on 9 and then use the other 9 to convert, seal with a fork. 4. Preheat your baking appliance to 350 degrees. Brush pastry with melted butter and bake for 30 minutes. 5. Enjoy them fresh!
