FULL RECIPE ⬇️ If you’re new to canning and want something simple, start with fruit. 🍍 The next small step up from canning whole fruit is jam. It’s almost the same process, you just chop the fruit, add sugar, and cook it down until it thickens. That’s really all there is to it. Here’s a super simple pineapple jam: Start with: • 4 cups finely chopped pineapple • Juice from 1 lemon • About 1 cup sugar (The Ball book recommends 2 cups, but it came out entirely too sweet. You can always add more if needed.) Add everything to a pot and bring it to a boil, stirring often. If you prefer a smoother jam, you can use an immersion blender to break it down a bit more. Once it thickens and sticks to the back of a spoon: • Ladle into jars • Wipe the rims • Add lids and bands (finger tight) • Process in a water bath for 10 minutes. • Then turn off the heat, remove the lid, and let the jars rest in the pot for 5 minutes. • Remove and allow them to sit undisturbed for 12–24 hours while they seal. The biggest mistake people make when they decide to spend a day making jam? They try to cook all the fruit at once. I get it. You’ve got 20 pounds of strawberries sitting on the counter (in my case, it was 30!) and your brain goes let’s just throw it all in one giant pot and get this over with. But jam doesn’t work like that. If you want jam that actually sets, tastes amazing, and looks beautiful, you need to make it in small batches. Here’s why 👇 🍓 Jam needs to reach the right temperature to set. When you cook a huge pot of fruit, it takes forever for the mixture to reach the gel stage. By the time it finally gets there, the fruit has been cooked to death and the flavor is dull. 🍓 Small batches cook faster. When you’re working with about 4–6 cups of fruit at a time, the jam reaches the proper temperature quickly. That means the natural pectin works better and you get a reliable set. 🍓 Your fruit flavor stays fresh and bright. Long cooking times flatten the flavor. Small batches preserve that fresh strawberry taste that actually reminds you of summer. 🍓 You’re less likely to scorch it. A massive pot of jam is harder to stir evenly and much easier to burn on the bottom. 🍓 Your jam will look better. Small batches keep the color vibrant instead of turning it into that dark, overcooked red. Ironically, making jam in smaller batches usually saves time overall because each batch cooks faster and behaves predictably. So if you’re planning a big jam weekend like the one I just did… Don’t try to rush it with one giant pot. Strawberry Lemonade Marmalade Wash 1 pound of lemons. Trim off ends then slice in half long ways. Cut out core and seeds from middle. Place pith and seeds into a cheesecloth bag and set aside. Then slice halved lemons into thin half circles. Place lemon slices and pith/seed bag into non metal bowl and cover with two cups of water. Wash and chop 1 pound of strawberries. Place in a bowl and cover with 2 cups of sugar. Let both bowls sit for 3 hours. Remove cheesecloth bag and pour both bowls into a pot. Cook over medium heat for 45ish minutes, stirring often. Bring marmalade to 220° F. Add hot marmalade to hot half pint jars. Debubble well, leave 1/2 inch headspace. Clean rim of jar. Add lid and ring, fingertip tight. Add hot jars to hot water bath canner. Boil jars for 10 minutes (adjust for elevation above 1000'). Then turn off heat and remove lid for 5-10 minutes. Remove jars and place on towel on counter for 12-18 hours. Makes about 3 half pints. #canningandpreserving #canningrecipes #homesteadkitchen #marmalade #strawberrylemonade

Seriously so quick and easy!!! Recipe: cut 1 Pound of strawberries In saucepan, add strawberries, 1 cup sugar and 2 TBS lemon juice. Stir and heat on medium until cooked down. Save this for when strawberry season hits 🍓 Recipe is below — but if you want me to DM you the recipe card so you don’t lose it, just comment ‘JAM’ 💌 2 pounds fresh strawberries (washed + chopped) 1/2 cup granulated sugar In a medium saucepan over medium heat, add the berries and sugar. Mash the berries with a potato masher to get some of the juice going, and then bring to a simmer. Cook the jam until it thickens and starts to cling to the bottom of the pan. Stir it ever 2-3 minutes, and keep an eye on it, about 10 minutes. Once it threatens to stick to the bottom of the pan, stir it constantly for 1 minute to thicken further. Pour into a pint jar (or two half-pint jars). Let cool to room temperature. Store in the fridge. Use within 2 months. #simple #simplerecipe #strawberryjam #homemadejam
