In a pan at peanut butter chili oil, rice vinegar, soy sauce at 1.5 to 2 cups of hot noodle water mix, and once it starts to boil, add in the noodles. 4. Sauce will thicken within 1 to 2 minutes garnish with black sesame seeds, chili oil, and cilantro. 5. Chilli Peanut Udon w/ Charred Sesame Broccoli Serves 2 Ingredients For the chilli peanut sauce 1 tbsp crispy chilli oil, solids only (I use Lao Gan Ma or White Masu) 1 tbsp peanut butter 1 tbsp miso 1 tbsp mirin 1 tbsp soy sauce 2 tsp rice wine vinegar (apple cider or white vinegar) Water to loosen For the broccoli 3 tbsp sesame seeds 1 bunch tenderstem broccoli, trimmed and halved or quartered lengthwise 1 tbsp oil 2 tsp soy sauce 2 tsp rice wine vinegar (apple cider or white vinegar) 2 tsp sesame oil 2 tbsp sesame seeds For the rest 2 portions of protein of choice, optional - I used baked tofu 2 portions udon noodles 2 soft boiled or fried eggs, optional - omit for 100% plant-based recipe Spring onions, finely sliced Method Toast the sesame seeds | Heat a wide frying pan over medium heat | Add the sesame seeds and toast until deeply golden and aromatic | Tip out and reserve Char the broccoli | Return the pan to the heat and increase to a high heat | Add the oil and broccoli with a pinch of salt | Leave still until well charred then stir and toss and repeat until more charred and and just tender | Remove the broccoli and add to a bowl, or to save on washing simply allow the pan to cool | Add the soy sauce, vinegar, sesame oil and toasted sesame seeds and stir to combine | Taste and season with salt if needed Make the sauce | Whisk together the chilli oil (solids), peanut butter, miso, mirin, soy sauce and vinegar until smooth | Loosen with a spoon of hot noodle or tap water if needed Cook the noodles | Cook the udon in well-salted boiling water until just tender | Drain, reserving a little cooking water Bring together | Add the hot noodles to the sauce | Toss to coat, loosening with more water if needed | Divide between bowls and top with the charred broccoli and your protein of choice

50 30 | S2 EP. 5 SPICY PEANUT CHICKEN NOODLES 🍜💪🍗 50g Protein | 676 Cal | 26 Fat | 60 Carbs INGREDIENTS FOR 2 For the miso peanut sauce 40g peanut butter 25g white miso 20ml rice vinegar 20ml soy sauce 1 tbsp sugar ½ tsp MSG (optional) 65ml water For the herb salad ½ cucumber 10g fresh coriander 4 spring onions For the spicy chicken 1 garlic cloves 1 tbsp gochujang 1 tbsp Korean chilli flakes 1 tbsp dark soy sauce 1 tbsp rice vinegar 1 tbsp sugar 400g chicken mince 1 tbsp vegetable oil To serve 200g udon noodles METHOD To make the miso peanut sauce, whisk together the peanut butter, white miso, rice vinegar, soy sauce, sugar and MSG until smooth. Slowly drizzle in the water while whisking until the sauce is velvety and pourable. Set aside. For the herb salad, slice the cucumber into thin half moons, pick the coriander leaves and finely slice the green tops of the spring onions. Combine in a bowl. Chill in iced water if you want more crunch. Add the garlic, gochujang, Korean chilli flakes, dark soy, rice vinegar, sugar and the white parts of the spring onions to a blender. Blitz until smooth and set aside. Heat a large frying pan over high heat. Add the oil, then the chicken mince. Press it flat and let it brown deeply on one side before breaking it up. Cook through, then pour in the chilli sauce. Stir and let it bubble for 2–3 minutes until thick, sticky and fully coating the chicken. Cook the noodles according to pack instructions. Drain and toss immediately with the miso peanut sauce and a splash of warm noodle water until glossy and well coated. Divide the saucy noodles between bowls. Top with the spicy chicken and the herb salad. Finish with extra miso peanut sauce if you like. #highproteinrecipe #easyrecipes #5030

Peanut Sauce Ingredients: 1/4 cup peanut butter, 1/4 cup hoisin sauce, 1/4-1/2 cup milk, 1 tbsp rice wine vinegar, 2 tbsps olive oil, 1 tbsp minced garlic, 1oz minced shallots, 2 tbsps palm sugar or 1 1/2 tbsps brown sugar. Instructions: In sauce pan heat oil on low and add shallots and garlic. Cook for a few minutes and add sugar, 1/4 water and rice vinegar. Mix and then add peanut butter and hoisin. a healthy weeknight win that comes together fast. high protein, packed with veggies, and coated in the dreamiest sesame peanut sauce 🥢 here’s what you’ll need: • chicken breast • broccoli • bell pepper • snow peas • garlic • green onions • cashews • sesame seeds • the quick sesame peanut sauce that pulls it all together toss it all in one pan and let the sauce simmer until glossy and sticky. serve over rice for the coziest dinner. STICKY SESAME CASHEW CHICKEN 1 tbsp olive oil • 1 lb chicken breasts, cut in bite size pieces • 2 cups broccoli florets • 1 red bell pepper, cut in strips • 1 cup snow peas • 3 cloves garlic, minced • 1/3 cup unsalted cashews • 4 green onions, chopped • 2 tsp. toasted sesame seeds FOR SAUCE 4 tbsp low sodium soy sauce • 3 tbsp peanut butter • 2 tbsp honey • 1 tsp sesame oil • 1 tbsp grated ginger 1) over medium heat add 1 tbsp oil to a large skillet. once hot, add chicken, salt, and pepper to taste. cook until lightly browned, about 5 minutes. transfer to plate and set aside 2) add another tbsp. oil to pan along with broccoli, bell pepper, and snow peas. cook until tender, stirring frequently 3) for sauce, whisk together all ingredients in small bowl. add a splash of water if a thinner consistency is preferred. 4) add chicken back to pan along with garlic and mix together. add cashews and pour sauce over top. mix well and bring to a boil. lower heat and simmer until sauce has thickened. sprinkle with green onions and serve over rice. (4-6 servings)
