PICKLED EGGS 24 hard-boiled eggs, peeled 3 cups white vinegar 2 cups water 2 Tbsp. salt 1/2 cup sugar 1/2 onion, sliced 3-4 bay leaves 3-4 garlic cloves 3 tablespoons pickling spice * optional 1 or 2 Jalapeños, sliced — more for extra hot! Place peeled, hard-boiled eggs into a quart wide mouth jar. Make brine by mixing water and vinegar in a small saucepan, add sugar and salt. Gently heat until simmering, then remove from heat. Add spices directly to the egg jar — that way if your brine doesn’t all fit, you will still have the good stuff in your pickled eggs! Layer the onions and peppers in then jars. Pour the hot brine over the eggs and spices, leaving as little headspace as possible. Seal the jar and allow the eggs to cool slightly before storing them in the refrigerator. Allow the eggs to pickle for at least 24 hours before eating, preferably around 1-2 weeks for better flavors. Pickled eggs last 3-4 months in the refrigerator. Sometimes longer!

Mayak eggs are often served with a bowl of rice or as a banchan (Korean side dish). They are also incredibly easy to make at home. Make a batch today and you’ll have delicious Korean marinated eggs all week! Ingredients: 6 large eggs 1/4 onion, chopped 4 clove garlic, minced 3 green onion, chopped 4 red chili, chopped 1 Korean chili pepper, chopped 1/2 cup water 1/2 cup soy sauce 1/3 cup rice syrup or honey 1/2 tbsp sesame oil 1 tbsp white sesame seeds Directions: 1. Bring a pot of water to a boil. Carefully lower the eggs into the boiling water using a strainer, then cover with a lid. Cook for 6 minutes for the perfect soft boiled eggs. 2. Once done, remove the lid and carefully transfer the eggs to a bowl of ice bath. Let them cool for at least 15 minutes before peeling. Gently peel the eggs and set them aside while you prepare the marinade. 3. In a bowl or container, combine onion, garlic, green onion, soy sauce, water, rice syrup, red chili, Korean chili pepper, sesame oil, and sesame seeds. Stir until the syrup is fully dissolved and all the ingredients are well combined. 4. Transfer the peeled eggs into the marinade. Give it a good mix to make sure that the eggs are immersed in the marinade. Cover and refrigerate overnight. 5. Serve the eggs with a bowl of steamed rice, drizzle more marinade on top and enjoy!

Makes 1 quart jar or large pickle jar: 12 hard-boiled eggs, peeled 2 cups white vinegar 1 cup water 2 tbsp sugar 1 tbsp kosher salt 2 cloves garlic, smashed 1 small onion, sliced (optional) 1–2 jalapeños, sliced (leave seeds for extra heat) 1 tsp mustard seeds 1 tsp black peppercorns 1 tsp crushed red pepper flakes (optional for more heat) 1–2 bay leaves Fresh dill flowers: 1–2 heads per quart jar, or 1 tsp dried dill 1 tbsp hot sauce (for Buffalo-style kick, optional) Instructions: 1) Hard boil the eggs, peel, and set aside. 2) In a saucepan, combine vinegar, water, sugar, salt, garlic, mustard seeds, peppercorns, bay leaves, and red pepper flakes. Bring to a boil, then remove from heat. 3) Let brine cool slightly (hot, not boiling, so it doesn’t overcook eggs). 4) In a clean quart jar, layer eggs, jalapeño slices, onion rings, and dill flowers. 5) Pour the warm brine over eggs, ensuring everything is fully submerged. 6) Seal, let cool to room temperature, then refrigerate. 7)Wait at least 3–5 days for good flavor, 1 week for full spicy-dill flavor! Perfect Marinated Eggs 🥚 just try it and thank me later in the comments 😚 #mealprep #marinatedeggs I eyeball and taste test but here are the approx measurements: 2tbsp dark soy sauce 1/2c light soy sauce 1/2c chopped onion 1/4c honey 1tbsp sesame oil 1-2tbsp ea of: green onion, garlic, dill (optional add of msg, chili flakes, sesame seeds) Boil 8 eggs in boiling water for 6min and immediately soak in ice bath for 10min. Marinate in fridge for min 3 hours and enjoy 🫶

The eggs were rubbery and they did not taste good. The juice also left them with a weird green hue. One of my TikTok followers suggested that I use dill pickle brine. So here is my second attempt at pickled eggs. I let them sit for a FULL 2 weeks and needless to say they were actually pretty good. They tasted just like a salty pickle.
