Add oil and coil fold until the oil is fully absorbed. Cover and let it rest for 1 hour. Flour your surface, divide the dough into 4 and shape into balls on a well-floured surface. Flatten each one on parchment paper. Bake in a preheated oven with a hot tray inside at high heat for about 4 minutes. Once they puff up, turn on broil for 1 minute. Activate yeast: In a large bowl, combine warm water and yeast and let sit for about 10 minutes until foamy. 2. Mix dough: Add the flour and salt. Mix it around first, then add the olive oil. Mix by hand or with a mixer for about 5-7 minutes until smooth. 3. First rise: Lightly oil a clean bowl. Place the dough inside, turning it so it’s coated with oil. Cover with a warm towel and let rise in a warm spot for about 2 hours (until doubled in size). 4. Shape: Turn dough onto a lightly floured surface. Cut into equal pieces and shape into balls. Cover and let rest for 10 minutes. 5. Roll out: Roll each ball into a disk about 1/4-inch thick. Place on a floured surface and let rest another 15 minutes. 6. Cook: • Heat a pan over medium heat for 2 minutes. • Lightly oil the pan with spray, then wipe with a napkin so it’s just a thin coat. • Cook each pita for 1–2 minutes per side. Add lemon juice, Greek yogurt, red pepper paste, tomato paste, oil. Mix well until the chicken is fully coated. Cover and marinate for at least 2 hours, or overnight. Make sauce: In a bowl, whisk together mayonnaise, sour cream, lemon juice, garlic, olive oil, and salt until smooth. Refrigerate until ready to use. For the glaze : Mix oil, red pepper paste, sumac, salt, and pomegranate molasses in a small bowl. Set aside. For Sumac Onions: Combine sliced onion, lemon juice, sumac, parsley, salt, and oil. Toss well and set aside. Heat oil In skillet over medium high heat. Add the marinated chicken and cook in batches for about 8–10 minutes until fully cooked and slightly charred. Assemble the Shawarma: Take the pita wrap. Spread garlic sauce, add chicken, fries, sumac onions, fries and diced tomatoes.�Roll the pita tightly into a wrap. PITTA POCKET HACK! 🥙 Normally when I add my filling into a pitta I always struggle because I'm constantly trying to open it with our trying to break it. This way you can fill up your pitta without any struggle! 💛 Method • Slice your pitta bread and slowly open it, scrunch up some baking paper into a ball and put it inside. • Bake in the oven at 190°C for 4-5 minutes or until slightly golden. Optional - Brush or spray your pitta with some oil. • Remove the baking paper from the pittas and save that for another day. • Fill and enjoy!
