Many of you have heard me talk about UNK Pastiliere over the years and for good reason. It’s by far my favorite fig. There’s just something about it… that cherry like flavor really sets it apart from everything else I grow. It’s also a unique variety that requires pollination by the fig wasp to even produce fruit, which makes it even more special. Without the fig wasp there will be no figs! Early in the season, it has that rich, sweet cherry flavor. But as the season goes on, the taste shifts to something more bright and acidic, giving it a completely different character. Add in the velvety skin that melts in your mouth, and you’ve got a fig unlike any other. I hope one day everyone gets the chance to enjoy this one. UNK Pastiliere is truly something special.
