TERIYAKI CHICKEN NOODLES The perfect weekend Fakeaway, quick, easy & delicious. Has the flavours of a Chinese take out, but made at home in under 20 minutes 🥡🥢. Ingredients for 2 For the chicken: - 350g diced chicken thighs - 2tbsp cornflour - Tsp garlic granules & paprika For the sauce: - 2tbsp teriyaki - 2 crushed garlic cloves - 3tbsp soy sauce - Pinch chilli flakes - Tsp cornflour mixed with water For the noodles - 2 nests of dry noodles - 1 sliced onion - 2 spring onions - 2tbsp dark soy sauce - 1tbsp sesame oil Mix all the sauce ingredients together in a bowl. For the chicken use some kitchen roll to get rid of an excess moisture from the chicken. Then toss this in the cornflour and spices. Add a couple spoons of the sauce ingredients and stir. Then get a frying pan nice and hot with lots of low cal cooking spray, once the pan is hot add the chicken and make sure it’s not over crowded and try not to move the chicken too much. Leave it a good 2-3 minutes to cook on each side, so that it goes nice and crispy. When the chicken is almost cooked, reduce the heat of the pan and the sauce and leave this to simmer until it’s thickened and sticky. For the noodles, boil some water and add your noodle nests this takes around 5 minutes. In a wok fry the onion and whites of the spring onion. once soft add the greens of spring onion and cooked noodles, along with sesame oil and soy sauce and stir until the noodles are coated. Serve in bowls with the chicken on top and a sprinkle of sesame seeds and sliced spring onion.

Seriously one of the nicest pasta dishes I’ve had in a while, and it couldn’t be easier to make. Sometimes the most fastest recipes are the most satisfying. Per serving 👉🏼 473 cals | 41.6g protein INGREDIENTS (serves 4): ▪️200g pasta, (uncooked) ▪️400g chicken (raw) ▪️x1 onion ▪️x2 peppers ▪️200g light garlic soft cheese ▪️x1 tin chopped tomatoes ▪️x1 pack peri peri mix ▪️100ml water (swill out tomato tin) ▪️80g mozzarella cheese (*onion, peppers, & spices not tracked) Bake 45 mins covered at 190c fan until pasta is cooked and juices are soaked up. Here’s another quick dinner idea! It’s my chicken baked in the oven with green beans and potatoes. Here the marinade is the real game-changer! Ingredients 4 chicken thighs 2.2 lb potatoes (1 kg) 9 oz green beans (250 g) fresh or frozen salt & pepper For the marinade: 2 tbsp whole grain mustard 1 tbsp honey 1 tsp dried thyme 1 lemon use half for juice, slice the other half 3 tbsp olive oil Preheat oven to 400°F / 200°C (convection). Mix mustard, honey, thyme, lemon juice, and olive oil; season with salt and pepper. Halve or quarter potatoes and place with chicken thighs in a baking dish. Season, pour marinade over, and coat evenly. Tuck in lemon slices and roast 25–30 min. Trim green beans. This is the meal you will keep coming back to- cozy, comforting, a true winner. Here is my Creamy Chili Miso bowl with Crispy Pork recipe 🍜 For the Pork & Marinade
• 8 oz ground pork (or any ground meat)
• 1 tbsp mirin
• 1 tbsp minced ginger
• 1 tbsp sesame oil
• 1 tbsp black bean sauce
• 2 cloves garlic, minced For the Soup Base
• 2 tbsp soy sauce
• 2 tbsp sesame paste (or peanut butter)
• 1 tbsp rice vinegar
• 1 tsp lime juice
• 3 tbsp white miso paste
• ½ tsp sugar
• 1 tbsp chili oil (preferably homemade)
• 2 cups chicken stock
• 1 can coconut milk For the Noodles & Toppings
• Noodles or rice, cooked per package directions
• 2 handfuls leafy greens (spinach, baby bok choy, or Chinese broccoli)
• 2 scallions, chopped
• Crushed peanuts Spicy chili oil. Instructions
Mix the ground pork with mirin, ginger, garlic, ssame oil. Let marinate for 15 minutes. Meanwhile, whisk together the coconut milk, chicken stock, soy sauce, sesame paste, miso paste, rice vinegar, lime juice, sugar, and chili oil. Bring gently to a simmer, then keep warm. Cook noodles or rice according to package directions. Steam or blanch the greens and set aside. Heat a wok over medium-high heat. Add 1 tbsp sesame oil or oil of choice then the marinated pork. Cook until deeply browned and crispy. Add the spicy bean sauce, cook for 1 more minute, then remove from heat. Assemble bowls with rice or noodles, ladle over the hot broth, top with crispy pork, greens, scallions, and crushed peanuts. Finish how you like. Cozy, spicy, grounding. #weeknightdinner
