Ingredients👇 For Mixture: Potato boiled & mashed – 1½ cup Coriander chopped – 1 tbsp Onion chopped – 2 tbsp Corn niblets – ¼ cup Green pepper chopped – 1 tbsp Mint chopped – 2 tbsp Red pepper chopped – 1 tbsp Ginger chopped – 1 tbsp Yellow pepper chopped – 1 tbsp Green chilli chopped – 1no Salt – to taste Pepper – to taste Cheddar cheese grated – 1 cup Cheese cube – 5 nos For Crumbing: Flour – 1 cup Salt – a pinch Water – 3/4 cup Bread crumbs For Frying: Oil – for deep frying Method 👇 To prepare the mixture for cheese balls add all the ingredients under mixture except for cheese cubes and mix them together. Check for seasoning and adjust. Take a small portion of the mixture (the size of a ping pong ball) place a cheese cube in centre and cover it with the mixture. Roll to shape it into a round. Repeat the same for the remaining mixture. Mix together flour, salt and water to make a slurry. Dip the cheese balls in the slurry and then dunk it in bread crumbs. Coat the crumbs evenly and then deep fry them on moderate hot oil till the outside is golden brown in colour. Recipe:- Ingredients: Burger bun- 4 nos Chilli flakes-for garnish Parsley- for garnish Cream cheese filling 3/4 cup+ 2 tbsp- cream cheese 2tbsp- sugar 1/4 cup - heavy cream Garlic butter 1/2 cup - butter 5 tbsp - garlic chopped 2tbsp- condensed milk 2tsp -parsley Procedure: 1. Cream cheese filling: In a bowl, add in your cream cheese, sugar and heavy cream and whisk till it is smooth. 2. Garlic butter: In a bowl, add in your butter, garlic, condensed milk and parsley and mix it till it’s well combined. 3. Filling and Baking Take your burger bun and cut it into 8 equal parts. *Remember to not cut the buns all the way to the bottom, cut it only halfway such that the 8 parts are still joined together* Carefully fill your 8 sections with your cream cheese filling and top the filled bun with a generous amount of your garlic butter. Bake at 160 degrees Celsius for 10 mins. When done, top it with chilli flakes and parsley and serve hot. BLUE CHEESE POTATO DAUPHINOISE… this is my heaven right here 🥹🥔❤️ And yes I went a bit rogue with the editing on this but let a gal live her French old movie fantasy okay… And no a classic dauphinoise does not have ANY cheese but I have one thing to say on that… JE NE REGRETTE RIEN!!! Here’s the recipe if you wanna try it at home 👇 INGREDIENTS 1 wedge of blue cheese 3 Maris pipers, thinly sliced 1 white onion, thinly sliced 200ml double cream 1 crushed garlic clove A couple of sprigs of thyme Plenty of salt Pinch white pepper METHOD 1. Peel and slice your potatoes, place the sliced potatoes into water so they don’t brown 2. Pre heat the oven to 170°C 3. In a sauce pan put your double cream, onions, garlic, thyme, some salt, pepper 4. Bring to the boil for a minute to thicken, then turn the heat off and leave to cool slightly 5. When the cream is cool enough to touch, remove the garlic and thyme. Drain off your potatoes and add them to the cream and combine well 6. Line your oven proof dish with parchment paper 7. Start layering the potatoes, just slightly over lapping. In between the potato layers crumble in some of the blue cheese, season with salt and a little of the cream 8. Once all the potatoes are used up, pour over the remaining cream and sprinkle with the rest of the cheese 9. Place some parchment on top and put in the oven for 40 minutes 10. After the 40 minutes remove the paper and leave in the oven at 170°C for another 20-30 minutes until golden on top 11. You can eat straight away at this point. 12. Or once cooked you can add a weight on top like I did. You’ll need to add another piece of parchment paper on top and then use a tray that fits inside the potato tray and use equal weighted tins or rice 13. Leave in the fridge for at least 30-1 hour, if you’re patient leave it over night for the perfect layers 14. Preheat the oven to 400°F. Line a baking sheet with aluminum foil. 2. Use a sharp knife to cut the entire top of the potato into thin crosswise slices (about ⅛-inch thick), stopping about three-quarters of the way down the potato so the base stays in tact and the pieces remain attached to the base. 3. Rub 1 tablespoon butter evenly across the top of each potato. Season the potatoes with salt and pepper, and then place them on the prepared baking sheet. 4. Roast the potatoes until they are golden and easily pierced with a fork, 20 to 25 minutes. 5. Remove the baking sheet from the oven and sprinkle each baked potato with 2 tablespoons shredded cheese and 2 tablespoons bacon. Push some of the toppings between the potato slices. It doesn’t get any simpler! You don’t even have to knead the dough, just dump all your ingredients in a bowl and voila! ❤️ I’ve topped my focaccia with US chickpeas, olives and rosemary- I love the crunch from the chickpeas in the bread. Chickpeas are a great source of essential nutrients and should be a go to ingredient to boost overall health. Ingredients- 340g all purpose flour 1 tablespoon instant/active dry yeast 1 teaspoon sugar 1 teaspoon salt 350g water 3-4 tablespoons olive oil + extra Procedure- 1. In a large bowl, combine the flour, yeast and salt. 2. Gradually add lukewarm water, depending upon how much water your flour can take. If you think the dough is becoming too loose and soupy, please add less water. 3. Add olive oil and bring the dough together with a spatula. 4. Cover the bowl and refrigerate overnight. 5. The dough should have doubled in size. Transfer it onto a greased 8X8” baking pan and let rest for another 2-3 hours. 6. Smother generously with a drizzle of olive oil and dimple the dough. 7. Top with your favourite toppings, I put boiled chickpeas, fresh rosemary and olives. 8. Bake at 210C for 20 minutes, or until golden. Wholesome Lentil and Walnut Sausage Rolls by @healthylivingjames 🥖💚 Flakey heartwarmingly good plant based sausage rolls make for a perfect afternoon snack! 🌿 Please see below 👇 for the full recipe. Ingredients for 10 rolls: ⁣⁣ ▪️ 1 tbsp olive oil ▪️ 2 garlic cloves ▪️ 100g mushrooms ▪️ 110g walnuts ▪️ 1 sprig fresh rosemary ▪️ 1 sprig fresh thyme ▪️ 1can green lentils ▪️ 1 tbsp tamari ▪️ 2 tbsp plain flour (I used gluten-free) ▪️ 1 sheet puff pastry (I used gluten-free) ▪️ 4 tbsp cranberry sauce (optional) ▪️ sesame seeds (optional) 1️⃣ Firstly, chop the mushrooms, walnuts, garlic, rosemary and thyme 2️⃣ Heat a non stick pan with olive oil adding in what you just chopped and fry for a few minutes until the mushrooms soften 3️⃣ Now add in the drained lentils, tamari, generous pinch of salt & pepper and fry for a further 5 minutes 4️⃣ Transfer the mix to a food processor and pulse into a mince texture (don't over blend into a paste) 5️⃣ Tip out the mix into a large mixing bowl and add in the flour and fold it through the mix. Set aside for 5 minutes to cool 6️⃣ Meanwhile roll out your pastry sheet. Place the lentil mix to one side of the sheet and shape into a long sausage roll (see photos above) top with cranberry sauce (optional) and fold over the top, crimp the edges, glaze with olive oil and top with sesame seeds (optional). I prefer to slice into small sausage rolls before baking at 200C for 25 minutes or until golden FAQ's: ➡️ Can I use dried rosemary and thyme? Yes this will work I would go for 1.5 tsp of each ➡️ Which lentils are these? They're tinned cooked green lentils which you can get in most supermarkets ➡️ What if I am not gluten-free? No problem, just use normal puff pastry, flour and switch the tamari for soy sauce ➡️ Is the cranberry sauce essential?
