MUSHROOM RISOTTO - one of my favorite risottos 🤤 RECIPE ⬇️ 1. chop 200g of mushrooms and fry in a pan 2. season with pepper, salt and fresh parsley 3. set the mushrooms aside 4. add 50g of butter, 1 onion and 2 chopped garlic cloves to the pan 5. add 1 cup arborio rice to the pan and saute for a while 6. add 500ml of chicken broth at first and mix 7. when the rice starts to thicken, add more chicken stock & water and mix (it is important to stir the rice all the time!) 8. finally add the mushrooms 9. add butter and a lot of Parmesan cheese #lunch #lunchideas #goodfood #eatwell #recipes #foodblogger #foodstagram #healthyfood #reels #instafood #instafood #homecooking #cooking #risotto #delicious #dailyfoodfeed #cooking #vegetarian #vegetarianfood #dinnerideas

GARLIC BREAD BUT MAKE IT BOUJEE 🤣 honestly this is DELICIOUS and the butter you can keep in the freezer if you make a big batch for things like basting meats meats or chucking a tbsp in rice/risottos etc. Cut and cook the entire garlic bulb with olive oil and salt over the top and covered in the oven on 180°c for 45 mins or until super soft. Then add to butter with parsley and salt ✅ Mine accidentally got a little melty so I just put it in the fridge and it’s ready to go whenever! It’ll melt over your toasted bread and sprinkle a little shaved Parmesan over the top and you’re good to go! 😍 YUM!

Le 5 risposte che mi ispireranno di più avranno diritto a un corso di foraging con me per due persone♥️ questo è il mio regalo@di Natale per voi! Questa è la ricetta del mio cuore per due motivi. Unisce “riso e latte”, il piatto che mia nonna mi preparava nelle sere d’inverno in montagna quando fuori ero buio e si gelava, e l’abete rosso, uno dei miei sapori selvatici preferiti, protagonista della foresta boreale! Prepararlo è semplicissimo! Per 4 persone • 1 lt di latte • 300 gr di riso • 1 lt di acqua calda con rametti di abete rosso in infusione • 50 gr di burro freddissimo • 100 gr di parmigiano grattuggiato • sale QB Tostate bene il riso, salatelo e poi iniziate a bagnarlo@con il latte e l’acqua mischiati fino a quando è cotto ( riso carnaroli 13 minuti ). Poi, tenendolo morbido, mantecatelo all’onda con burro freddissimo e parmigiano! 🌲un perfetto risotto fatto con l’albero di Natale! Risotto with Winter Greens is my latest and greatest in the world of risottos! It’s my favorite meal to make that is 1: impressive 2: delicious and 3: secretly easy! Whipped this beauty up in one of my favorite stainless steel @AllClad Stainless-Steel Sauté Pan (my favorite stainless steel piece in my kitchen - had it since we registered for our wedding!) If you need a last minute gift for someone who loves cooking - this should be it! And honestly, make them risotto too and you’ll be a star! Recipe is below and my fav All-Clad products linked in my profile 2 tablespoons olive oil (plus more for frying the kale) 2 shallots, diced 4 cloves garlic, roughly chopped 1 cup Arborio rice ½ cup dry white wine (avoid oaky chardonnay) 2½ cups chicken or vegetable stock ½ cup Parmesan cheese, grated ⅓ cup Pecorino cheese, grated ¼ cup mascarpone cheese Kosher salt and freshly cracked black pepper Lemon wedges, for serving 1 head dinosaur (Lacinato) kale, stems removed and leaves thinly sliced Instructions In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced shallots and sauté until translucent, about 3–4 minutes. Add the garlic and cook for another minute until fragrant. Add the Arborio rice to the skillet, stirring to coat each grain with olive oil. Toast the rice for about 90 seconds, stirring frequently. Pour in the white wine, stirring until the rice absorbs all the liquid. Begin adding the stock ½ cup at a time, stirring frequently. Wait until each addition is fully absorbed before adding more stock. Continue this process until the rice is just tender, about 18–20 minutes. Stir in most of the Parmesan and Pecorino cheeses (reserving some for garnish) and all of the mascarpone cheese. Mix until creamy. Remove from heat and season with salt and pepper to taste.

Lo proverete anche voi questo risotto? 📙 Ingredienti: - 100g riso Carnaroli - ½ cipolla - 1 lt brodo di carne - Olio EVO q.b. - Vino di riso q.b. - 200g pisello - 200g prosciutto cotto dadini - 100g panna - 100g formaggio grattugiato Ingredienti crema di piselli: - 100g piselli - ½ cipolla - Sale q.b. - Pepe q.b. - Olio q.b. - 200 ml brodo di verdura Bacchette pronte? 🥢 In una pentola, scaldare un filo d’olio extravergine d’oliva e soffriggere la cipolla tritata finemente fino a quando diventa trasparente.Aggiungere il riso carnaroli e tostarlo per un paio di minuti, mescolando bene. Sfumare con un po’ di vino di riso e lasciare evaporare. Aggiungere gradualmente il brodo di carne caldo, mescolando di tanto in tanto.
