Take the beef out the fridge 1 hour before cooking. 2. Pat the beef dry, then get a large pan over a high heat. Add the oil and then go in with the beef. Sear it on all sides until nicely browned. Then add the salt, butter, crushed garlic and rosemary. Baste the beef multiple times, then remove from the pan. 3. Add roughly chopped carrot, onion and celery to your roasting tray. Place the beef on top. 4. Roast the beef in the oven at 170 degrees celcius until the internal temp is 50-52 degrees celcius (approx 1 hour depending on the size of your beef joint). 5. Remove from the oven, cover loosely with foil and leave to rest for at least 30 minutes. It will continue cooking whilst it rests, and should reach 52-54 degrees celcius internal temp. Tenero, succoso e saporito!😋 🧑‍🍳Il nostro @micheleghedo ci fa vedere come preparare un roast beef perfetto! 👉INGREDIENTI (per 4 persone) 800/1000g controfiletto di manzo Sale q.b Pepe q.b Erbe aromatiche q.b 1kg di patate per la salsa: 1 bicchiere di vino bianco 1/2 bicchiere di brodo di carne 👉PREPARAZIONE 1. Lega per bene il controfiletto di manzo con lo spago, mettendo anche del rosmarino. 2. Sala per bene la carne e rosolala in una padella calda con del burro chiarificato, dovrà rosolare su tutti i lati. 3. Dopodiché posiziona la carne su una griglia ed inforna a 220 gradi per 15 minuti. 4. Mentre cuoce in forno vai a formare la salsina sfumando il fondo di cottura con del vino bianco. 5. A fine cottura, copri la carne con della carta forno per circa una decina di minuti così da ridistribuire i succhi nelle fibre. 6. Per il contorno invece ti consiglio di cuocere in forno delle patate novelle per circa 30 minuti. 7. Togli il la carne dalla carta forno e affettala con un coltello, sarà super succosa e morbida! 10. FOOLPROOF roast beef recipe — I call this my budget roast bc we buy 1/2 cow from a local farmer and get a bunch of round roasts which are generally tough. But when cooked properly and sliced thin it makes for the most perfect sandwich meat. **In this video is a top / inside round, one of my favs to use for this recipe!** Put on sandwiches, serve with eggs in the morning, make steak wraps, add to salad, mix in a stir fry… you can use the meat in so many ways once roasted. It will save you so much cooking time during the week!!! MEAT CUTS 101: 1) premium (most marbled, juicy, tender) = prime rib, tenderloin roast, ribeye roast 2) medium (slightly leaner but still good flavor) = chuck roast, sirloin roast 3) budget (tougher, less fat, slice thinly against the grain and cook at most to medium rare to retain juices) = bottom / outside round, top / inside round, eye of round METHOD: - A generous amount of salt on the outside is all you need - preheat oven to 450f and roast uncovered on a rack for 15mins - reduce heat to 325f and cook for another 45-60 mins depending on size of roast **if you want this to be foolproof get an oven safe thermometer and roast with it in the middle of the thickest part of the beef. start checking around 45mins and take out the roast when the temp just reaches 125f for rare or 130f for medium rare. Let rest for 15-20 mins, it will continue to raise in temp while resting. ***For the budget cuts, cooking any longer than this will yield a really tough roast. To keep in the fridge and slice thinly for sandwiches you want a nice pink juicy center. If using a premium cut you can cook to medium if preferred as the fat marbling helps to keep it tender. ❌ Glorious Roast Beef ❌ I love a good entertaining recipe especially at this time of year. I’m not quite ready to go full hog with the Turkey & Ham so this roast beef recipe from Tesco’s 52 Weeks of Little Helps is perfect. You can find easy recipes to make, every single week on their website. While every recipe is simple, they are all made with high quality ingredients with the freshest produce & everything is available in @tescoirl! This Glorious Roast Beef dish features Tesco Finest Irish Round Roast. It is surprisingly easy to make & looks super impressive. Ingredients 1 - 1.3kg Tesco Finest Irish Round Roast 1 tsp cumin 1 tsp nutmeg 1 red onion 1 lemon 6 tsp caster sugar 750mls cranberry juice A handful of Rosemary sprigs Pomegranate seeds Take the joint out of the fridge 30 mins before cooking. Preheat the oven to gas 6, 200°C, fan 180°C. Mix together 1 teaspoon of cumin, 1 teaspoon of nutmeg and seasoning, then rub into the beef. Put 1 large red onion cut into wedges and 1 lemon cut into wedges in the bottom of a roasting tin, place the beef on top and roast for 1 hour 15 minutes for medium beef. Meanwhile, place 750ml of cranberry juice in a saucepan with 6 tsp of sugar. Simmer for 20-25 minutes, stirring occasionally, until the sugar has dissolved and the mixture has reduced by half. Stir through 1 and a half teaspoons of cornflour mixed with water and bring the mixture to a vigorous boil, stirring continuously, for 3-5 minutes until thickened and glossy. After the beef has been cooking for 40 minutes, brush generously with the cranberry glaze. Repeat 15 minutes before the end of cooking time. Remove the beef from the oven and leave to rest for 20 minutes before serving. Place on a serving platter and brush with some of the remaining glaze. Decorate with pomegranate seeds and rosemary springs to garnish, if using. Serve with the remaining glaze to drizzle over the beef. Pull it from the fridge 30 minutes before cooking. A cold center means uneven cooking and overcooked edges before the middle catches up. 2. Skipping the 500°F sear. High heat triggers the Maillard reaction (that’s the science behind a deeply browned, flavored crust). You cannot get that at 350°F. Start hot. 3. Adding garlic and herbs before the sear. They will burn. Add them after the high heat blast. This is how you get flavor without bitterness. 4. Roasting at one temperature. Sear at 500°F, then drop to 225°F. The low-and-slow finish keeps proteins from contracting too quickly, which is the whole secret to tenderness in a lean cut. 5. Not using a meat thermometer. This cut has no marbling to save you if you overcook it. Pull at 125°F. That’s it. 6. Cutting into it immediately. Rest it 15-20 minutes tented with foil. This is non-negotiable. 7. Throwing away the drippings. Those browned bits in the pan are pure concentrated flavor. Deglaze them into a butter-flour gravy and it will genuinely taste like a restaurant made it. Pick one up at your nearest @costco_aus warehouse and give the recipe below a run ° Roasted Whole Angus Reserve Rostbiff recipe: Roasted Whole Angus Reserve Rostbiff Serves: 8 Prep: 1.5 hours Cook: 1.5 hours + rest time Difficulty: Easy Ingredients. 1 x whole Angus Reserve Rostbiff (approximately 3-3.5Kg) 3 tbs olive oil 1 tbs fennel seeds 1 tbs coriander seeds 1 tbs white peppercorns 1 tbs hot smoked paprika 1.5 tbs salt flakes ° Method. 1. Remove Rostbiff from any packaging and pat dry with paper towel. 2. Grind the above spices with salt in a blender or mortar and pestle till coarsely ground. 3. Rub the oil and spice rub into the beef till evenly covered, leave to sit on the kitchen bench for a further 1.5 hours (allowing to come up in temperature before cooking). 4. Pre-heat oven to 200°C conventional (180°C fan forced). 5. Heat a large skillet over a medium high heat with a little olive oil, add in the beef and brown evenly on all sides for 3-5 minutes. 6. Place into the oven, preferably on a small rack, set over the skillet to allow for a little heat flow. 7. Reduce oven to 150°C after 10 minutes and continue cooking for a further 1.5 hours. 8. Test the internal temperature after an hour of cooking by pushing a digital meat probe into the thickest part of the meat. To achieve medium rare, cook the beef to 54°C and then turn oven off, leaving the door open to allow the beef to rest for a further 20 minutes. The beef will increase several more degrees in this time as heat continues to travel 9.
