Prep your potatoes: Peel and chop your Maris Piper potatoes into even chunks so they cook evenly. 2. Parboil: Bring a big pan of salted water to a boil and add the potatoes. Boil for 8–10 minutes until the edges start to soften. 3. Drain and fluff: Drain the potatoes and let them steam for a minute so they dry out. Boiling the potatoes with baking soda helps breaking down the pectin, creating a rough surface and thus more crispiness. 🔥 ❹ Strain the potatoes, then shake to roughen the surface. ❺ Infuse the oil with garlic and rosemary. This is a little tip that I picked up from Kenji Lopez-Alt, by adding baking soda we create more nooks and crannies to brown in the oven 🥔 roast with a high heat oil or ghee or duck fat. Take baking dish out of oven carefully. Add potatoes and toss in the hot oil. Add 1 tsp salt and 1 tsp pepper. Bake at 425 for 40-45 min. I used @chosenfoods products for roasting and for the dip. Ingredients: Potatoes: 2 lb (900 g) Yukon Gold potatoes (about 5-6 medium), peeled and cut into large chunks 1/3 cup ChosenFoods 100% Pure Avocado Oil 2 tsp kosher salt, divided 2 tbsp finely grated Parmigiano Reggiano 1 tbsp chopped chives Flaky salt, to taste Chili flakes (optional) Thyme Mayo Dip: 1/2 cup Chosen Foods Classic Mayo 1 tsp fresh thyme leaves, finely chopped 1 small garlic clove, grated 1/2 tsp lemon zest 1/2 tsp lemon juice Pinch of kosher salt Instructions: Preheat the oven to 425°F (220°C). Place the potatoes in a pot and cover with cold water. Add 1 1/2 tsp kosher salt and bring to a boil. Cook for 10-12 minutes, until the edges are soft but the potatoes are not falling apart. Pour the avocado oil onto a large rimmed baking sheet and place it in the oven for 10 minutes. Drain the potatoes and let them steam dry for about 5 minutes. Return them to the empty pot, sprinkle with the remaining 1/2 tsp salt, cover with the lid, and shake the pot firmly. These are the best roast potatoes I’ve ever eaten. There are several tricks I’m using the ensure the perfect roastie. Bicarbonate of soda when parboiling gives you a better surface for crisping. Then I love roast potatoes when you roast a chicken with them, all of that flavour goes into the spuds. So instead we are using a chicken stock cube for that flavour, you can sub in a veggie stock cube too. Finally we are cooking in clarified butter for a buttery flavour but still incredibly crisp texture. Who wants one?? Recipe: 1kg potatoes 1 tbsp salt 1/2 tsp bicarbonate of soda 1 chicken stock cube 2 tbsp oil 100ml clarified butter 2 bulbs garlic, broken into unpeeled cloves 1 handful rosemary 1 handful thyme Salt and pepper 1. Peel, quarter and place the potatoes into a large pan of cold water. Add salt and bicarbonate of soda. Bring to the boil and par boil (10-15 minutes). Drain them and allow the water to steam off. Give them a little shake for crispier edges if you wish. 2. Meanwhile take a chicken stock cube and crumble it into a pestle and mortar or a bowl, add oil and combine together. Preheat your oven to 200c/180c fan. 3. Pour clarified butter onto a large baking tray, place into the oven until hot. Remove the tray, then carefully add the potatoes, garlic, rosemary, thyme, stock oil and season. Mix. Roast for 25 minutes. Turn. Roast for a further 25 minutes until golden and crisp. Enjoy!
