SCHOOL CAKE. 🍂 COMFORT CRAVINGS 🍂 Ingredients: 200g unsalted butter softened 50g vegetable/sunflower oil 250g caster sugar 4 medium eggs 50ml milk 1 tsp vanilla extract 200g flour 1.5 tsp baking powder 1/2 tsp salt Icing: 350g icing sugar 65g milk (use less milk for a thicker icing) Sprinkles of choice Method: - It's really important to weigh all the ingredients accurately and make sure they are at room temperature before you begin. - Preheat oven to 180C. - Pour caster sugar, butter and oil into a large bowl. Whisk or cream them together until light in colour, texture and fluffy. This could take between 3-5 minutes. Make sure not to over mix. - Add the eggs, vanilla extract and milk at this point. Whisk until combined with the other ingredients. If you notice it slightly curdling, keep going as it will come together and it's likely because the ingredients are not fully at room temperature. - Add the flour, baking powder and salt. Whisk this into the batter with a light hand without overworking the batter too much. This should take about 1 minute. - Pour into a lined 9 by 9 baking tin. - Tap a few times on the counter to release any air bubbles. - Bake at 180C for 20-25 minutes or until a toothpick comes out with only a few crumbs on it. My oven cooked the cake perfectly at 23 minutes. - Leave to cool fully and make the icing. - Whisk together the icing sugar and milk until a thick and creamy consistency. Add the milk in small stages so you can achieve the consistency you prefer. Add less milk if you want a thicker icing. - Pour on top of the fully cooled cake and smooth out evenly. - Add the sprinkles and put in the fridge for at least 2 hours for the icing to set. - As this is a predominantly butter cake, allow to come to room temperature before serving so the cake is nice and soft. - Slice and serve with lots of custard. #schoolcake #schoolsprinklecake #schoolcakeandcustard

THE BEST SCHOOL CAKE 😍 This is school cake taken to the next level 🙌 and the secret is the sugar syrup! If you’ve never tried sugar syrup on your sponge cakes before, you gotta try it! It makes the cake so so moist and brings out the sweetness 🤤 The whole cake is super quick and easy to make, we’re making a simple sugar syrup, a simple vanilla sponge cake, and a simple sweet icing, topped with lots of sprinkles! It’s absolutely delicious, just like they used to serve at school (but better 👀) Sound on for full instructions 🔉 All you need is: For the sugar syrup: (makes enough for around 4-5 cakes) 120ml water 100g granulated or caster sugar For the sponge: 170g margarine, room temp 170g caster sugar 170g self-raising flour 3 large eggs, room temp 1 tsp vanilla extract For the icing: 170g icing sugar, sifted 2-3 tbsp boiling water (or warm milk) 35g (about 4 tbsp) Sprinkles Tin size: 8x8” If you don’t want to add the sugar syrup you don’t have to 🥰 If you don’t want to have leftover syrup, just reduce it down to 25ml of water and 20g of sugar ☺️ The syrup will keep in the fridge for about 3 weeks in an airtight container/bottle Enjoy! #fitwaffle #fitwafflekitchen

British School Cake 🎂. RECIPE ⬇️ Join me on Sundays for some cooking content 😋. British school dinner cake is the cosy nostalgic bake we all need right now. School deserts were legit the best. This cake is so easy to make. Do it alone or with loved ones, and it's delicious. You can serve plain or with warm custard. Recipe below. RECIPE: Ingredients: • 225g of soft unsalted butter or margarine • 225g caster sugar • 4 large eggs • 225g self-raising flour • 2 tsp vanilla extract • 200- 250g icing sugar ( depends on how you like your consistency) • 3 tbsp boiling water • sprinkles • warm custard, to serve (optional) *Preheat the oven to 180C/160C fan/gas 4. Butter a tray/tin and line with baking paper.* For cake: Mix butter and sugar in a large bowl and beat with a whisk for a few minutes until pale and fluffy. Add the eggs one at a time, flour, and vanilla extract and beat again until you have a smooth batter. Scrape the batter into a greased tin with baking paper. Put the tin inside the oven for 30-35 mins or until a skewer inserted into the centre comes out clean. Leave the sponge to cool on a wire rack. For icing: Mix icing sugar with 3 table spoons of hot water. There should be enough water to make a thick icing. Spread the icing over the cake and sprinkle your sprinkles, lol. Sprinkle School Cake Recipe This is the same recipe I first shared back in 2021 and I’ve probably posted it a dozen times on my stories since then. It’s a regular in our household simply because it’s one of the easiest bakes ever and it never fails to put a smile on everyone’s face. It also ended up being one of the most popular desserts at my 2020 charity bake sale… who’s been here since then?? I use this exact base recipe for the jam and coconut version too - just swap the icing and sprinkles for a layer of jam and a generous sprinkle of desiccated coconut and voilà! Recipe: - 200g baking margarine/butter - 200g caster sugar - 200g self raising flour - 200g eggs (4 medium) - 3 tbsp milk - 1 tsp vanilla extract/paste Icing: - 200g icing sugar - 4-5 tsp milk - 1/4 tsp red food colouring (optional) - Sprinkles Method: 1. Preheat the oven to 180°C and line a 9 inch square baking tray. 2. Cream together the room temperature margarine/butter and sugar until light and fluffy, either by hand or an electric whisk. 3. Add the eggs, milk and vanilla and mix until fully incorporated. 4. Add the sifted flour in two halves, folding or whisking gently until combined. 5. Pour the batter into the baking dish (a brownie tin works well) and bake for 40-45 minutes, or until a knife inserted into the centre comes out clean. 6. Mix the icing sugar with 2 teaspoon of milk to begin with. Let the mixture sit for 30 seconds, then stir. Add a little more milk at a time until you reach your desired icing consistency. Add food colouring if using and mix well. 7. Once the cake is baked, transfer it to a cooling rack and allow it to cool completely. Pour over the icing, add sprinkles and let it set before slicing. Line a 20cm x 20cm square tin with baking paper. Cream the butter and sugar together in a mixing bowl. Add the eggs, vanilla extract, baking powder and the flour gradually, folding as you go. Pour the mixture into the tin and bake for 35-40 minutes or until a cake tester comes out clean. Leave the cake to cool before placing on a cooling rack. Mix together the icing sugar and water and pour onto the cake, topping with the sprinkles. Leave to set. Trim off the edges to make a neat square and slice into 9 even pieces.

Preheat your oven to 160ºC fan. Line a 9x13” baking tin with parchment paper. 2. In a large bowl, beat the butter and sugar together until light and fluffy. 3. Add the eggs and vanilla extract, mixing until well incorporated. 4. Gradually add the milk and flour, stirring gently until just combined. 5. Pour the batter into the prepared tin, spreading it evenly. Bake for 30-35 minutes, or until a skewer inserted into the centre comes out clean. 6. Allow the cake to cool completely in the tin. 7. In a medium bowl, gradually add water to the icing sugar, mixing well after each addition until a thick paste forms. 8. Once the cake has cooled, carefully spread the icing evenly over the top. 9.
