Grab the recipe below ⬇️ Ingredients 1.5 lb yellow potatoes, halved & cut into 4ths 2 bell peppers, sliced 1 zucchini, halved & sliced 1 red onions, sliced 1.5 lb chicken, cut into 1-in” pieces (I did chicken breast & thighs) 1/3 cup olive oil 1 lemon, juiced 1/4 cup chopped parsley 3 garlic cloves, minced 1/2 tablespoon dried oregano 1/2 tablespoons paprika 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon salt & pepper 1 tablespoon red wine vinegar For garnish: Cherry tomatoes, halved Lemon slices Chopped parsley Fresh Dill Tzatziki sauce Crumbled feta *NOTE: cooking times may vary. Cut similar sizes of veggies, potatoes and chicken to ensure even cooking. Chicken too small will overcook, zucchini too small will overcook, potatoes too big will be undercooked, etc…** Directions 1. Preheat oven to 425 degrees. 2. Arrange all veggies, potatoes and chicken to a large sheet pan. 3. Mix together olive oil, lemon, garlic, parsley, red wine vinegar and seasonings 4. Pour the marinade over the ingredients on sheet pan, toss to coat and bake in the oven for 35-45 minutes. **NOTE: cooking times will vary* 5. Macros Per Serving (8 Total) 550 Calories | 42g Protein | 52g Carbs | 18g Fat Ingredients (Makes 8 Servings) Honey Garlic Chicken - 1300g Raw Boneless Chicken Thighs, cubed and fat trimmed - 2.5 Tsp Black Pepper - 4 Tsp Garlic Granules - 3 Tsp Onion Powder - 2 Tsp Chilli Flakes - 6 Tsp Olive Oil - 50g Honey - 30g Light Soy Sauce - 25g Dark Soy Sauce Creamy Sriracha Sauce - 300g Low Fat Yogurt - 120g Light Mayo - 50g Sriracha - 25g Honey - 1.5 Tsp Smoked Paprika Toasted Sesame Fried Rice - 450-500g Frozen Mixed Vegetables (i had carrots, sweetcorn, green beans, peas) - 100g Green Onion, white part - 40g Sesame Seeds - 350-400g Uncooked White Rice (700-800g Cooked) - 40g Light Soy Sauce (adjust based on color) - 50g Green Onion, green part - 20g Light Butter, gives silky smooth texture to rice 👨‍🍳 Instructions 1. Slice chicken thighs into small cubes, trim excess fat, add seasoning with olive oil, honey and soy sauce. Mix well, set aside 2. In a bowl, add yogurt, mayo, sriracha, honey and smoked paprika. Mix till smooth. Bottle and refrigerate for the week 3. In a large lined sheet pan, spread marinated chicken, add cooking spray then oven bake for 20 mins at 190C / 390F until golden brown & crispy 4. Once chicken is cooked, remove from pan leaving resting juices. Add mixed veggies, green onion and sesame seeds. Mix thoroughly in all the chicken juices. Spread flat and oven roast for 15 mins 5. Crispy chopped taco chicken, chili-lime street corn shaved straight off the cob, and all the cold toppings piled into fresh green leaf lettuce boats. High protein. Big flavor. Zero boredom. Ingredients For the chicken: • 2½ lbs boneless, skinless chicken thighs, chopped small • 2 packets taco seasoning • 1 teaspoon garlic powder • 1 teaspoon smoked paprika • Juice of 1 lime For the chili-lime corn: • 4 fresh ears of corn, kernels shaved off • ½ purple onion, diced • 1 tablespoon olive oil • 1 teaspoon chili powder • Salt to taste • Juice of ½–1 lime • ½ cup Mexican crumbling cheese • Fresh cilantro, chopped For serving: • Green leaf lettuce (sandwich cut) • Diced avocado • Pico de gallo • Jalapeño slices • Crema or Greek yogurt • Extra cilantro ⸻ Instructions 1. Preheat oven to 425°F. Line a large sheet pan with parchment. 2. Toss chopped chicken with taco seasoning, garlic powder, smoked paprika, and lime juice. No oil needed. 3. Spread chicken in an even layer on one side of the sheet pan. Bake for 10 minutes. 4. While that cooks, toss shaved corn and purple onion with olive oil, chili powder, and salt. 5. Remove the pan, push chicken to one side, and spread the corn mixture on the other side. 6. Return to oven for another 10 minutes. Broil the last 3 minutes for crispy edges and charred corn. 7. INGREDIENTS 2 lb boneless chicken thighs Buffalo Wild Wings Parmesan Garlic sauce 1 tsp each salt, pepper, Italian seasoning, and onion powder 2 tsp each garlic powder and smoked paprika Small head of broccoli, chopped 24 oz baby potatoes 1 onion, sliced Olive oil Parmesan cheese INSTRUCTIONS Preheat the oven to 400 degrees F. Spray a large sheet pan with cooking spray. Wash the baby potatoes and quarter them. Slice an onion and chop your broccoli. Be sure to leave the broccoli in slightly larger pieces. Add all of the veggies to the sheet pan and drizzle some olive oil over them. Season the veggies with about half of the seasoning blend. Next, add the chicken thighs to a bowl and season with the rest of the seasoning. Add enough Parmesan Garlic sauce to coat the chicken. Stir until the chicken is well coated in seasoning and sauce. Bake at 400 degrees F for about 35 minutes, or until the chicken reaches an internal temp of at least 185 degrees F. Broil for just a few minutes if desired.
