Day 6 - Sri Lankan Mutton Rolls - elite short eat/snack you cannot stop eating 😮💨
Crispy on the outside, soft + spicy on the inside — classic short-eat style.
Recipe -
For the Filling
* 500g mutton (boneless), cut into tiny cubes almost mince line
* 2 tbsp oil
* 1 medium onion, finely chopped
* 3 cloves garlic, minced
* 1 inch ginger, minced
* 2–3 green chillies, finely chopped
* 1 sprig curry leaves
* ½ tsp turmeric
* 1 tsp unroasted curry powder
* 1 tsp chilli powder (adjust to taste)
* ½ tsp pepper
* ¼ cup thick coconut milk
* 1 medium potato, cut into tiny cubes
* Salt to taste
* Squeeze of lime
For the Pancake Wrap
* 1 cup all-purpose flour
* 1 egg
* 1¼ cup water (adjust to make thin batter)
* Pinch of salt
For Crumbing & Frying
* 1 egg, beaten
* Breadcrumbs
* Oil for deep frying
1. Make the Filling
1. Heat oil in a pan.
2. Add onions, garlic, ginger, green chillies & curry leaves. Sauté until fragrant.
3. Add turmeric, both curry powders, chilli powder, and pepper. Fry 30 seconds.
4. Add in mutton. Mix well until the spice coats the meat. Pour in coconut milk. Cover and slow cook until mutton is 75% done.
5. Add in potato and combine. Cover and cook until potatoes are soft and mixture becomes thick and slightly dry.
6. Taste and adjust salt. Add a squeeze of lime if you want brightness.
7. Cool completely.
2. Make the Pancakes
1. Whisk flour, salt, egg, and water until you get a thin crepe-like batter.
2. Heat a non-stick pan lightly greased.
3. Pour a thin layer — rotate to spread.
4. Cook until the top looks dry (don’t flip).
5. Stack them on a plate with a cloth over the top to keep soft.
3. Roll the Mutton Rolls
1. Place 1–2 tbsp filling on one end of the pancake.
2. Fold in the sides.
3. Roll tightly like a spring roll.
4. Seal with a dab of the pancake batter if needed.
4. Crumb & Fry
1. Dip each roll in beaten egg.
2. Coat generously with breadcrumbs.
3. Heat oil medium-high (around 170–180°C).
4. Fry until golden and crispy.
5. Drain on paper towels.
