INGREDIENTS 1 cup (250g) PnP Pumpkin, steamed and mashed 1 Pnp Large Egg 1 cup Pnp Self-raising Wheat Flour, sieved 1 tsp baking powder 3 tbsp Pnp White Sugar (optional) METHOD STEP 1: In a large mixing bowl, add the mashed Pnp Pumpkin and Pnp Large Egg. Whisk until well combined. STEP 2: Add in the sieved flour, baking powder and optional white sugar and mix until a smooth batter has formed. Allow the batter to stand at room temperature for 10 minutes. *Chef’s Tip: allowing the batter to stand ensures the flour absorbs the liquid well. STEP 3: Heat a large non-stick pan over medium-low heat. Generously grease the pan with non-stick cooking spray or vegetable oil. STEP 4: Add 3-4 tablespoons of the batter to the pan, spaced out, and gently use the back of the spoon to shape them into a small flat fritters. Cook for 2 minutes until golden brown, then flip and cook for a further 2 minutes on the other side. Repeat this step until all the batter has been used. STEP 5: Place the hot fritters directly into a large bowl of cinnamon-sugar and coat well. *Chef’s Tip: coat while the fritters are hot to ensure the cinnamon-sugar sticks well. Here are 3 methods to separate egg yolks from egg whites.  Method 1: Using the Eggshell Crack the egg in half on the rim of a bowl, and use each half of the eggshell to gently move the yolk back and forth while the egg white falls into the bowl. This is my personal go-to way because you don’t dirty more dishes than absolutely necessary.  Method #2: Using a Shot Glass Crack the egg onto a plate and then place a shot glass over the yolk. Tip the plate to the side, letting the egg white slide into a bowl.  This way works fine, but you’ll have an extra plate and bowl to wash.  Method #3: Using a Plastic Bottle Crack the egg onto a plate or into a bowl. Use your hands to gently crush a plastic bottle, squeezing out most of the air. Place the opening of the bottle against the egg white, release your grip on the bottle, and let the suction pull the egg yolk into the bottle.  This way is actually pretty cool, but you’d need to have an empty plastic bottle handy.  If you’re not a fan of touching raw egg or don’t want to use your hands to separate the egg, any of these options will work.  Do you have a different go-to method? Dinner of the day😋 Seafood Okonomiyaki made with @airbotsingapore iCooker -Ingredients- Cake flour - 100gm Bonito flakes Cabbage - 200gm Prawns & Scallops Egg - 2 -Seasonings- Salt to taste Water - 100ml Okonomiyaki sauce Mayonnaise Seaweed powder (Aonori) Bonito flakes Cooking Instructions: 1. Sieved the cake flour in a bowl & add salt (I added some mushroom seasonings too) 2. Pour the water & mix well. 3. Finely diced the cabbage. 4. Cut the prawns into smaller pieces. 5. Divide the chopped cabbage in half, batter in half, add shrimps & scallops, an egg, combine all the ingredients. 6. Pan fry with @airbotsingapore iCooker, pour the cabbage mixture & spread it. Pan fry until golden brown ( roughly takes 3~4 minutes ). 7. Flip over, cover with lid over low heat & simmer for 3~4 minutes or until golden brown. 8. Remove the lid, flip over again & simmer for 3 minutes over low heat. 9. Brush okonomiyaki sauce over the Okonomiyaki, squeeze some mayonnaise, sprinkle with seaweed powder & Bonito flakes 10. Festive cookies 🎅 These are egg free! 😍 Cooked in the air fryer! 📍 Ingredients 📍 - 200g of flour sieved - 75g of peanut butter - 125g of unsalted butter - 50g of caster sugar (optional) - 1tsp of vanilla extract - 50ml of milk of choice 📍 Method 📍 Start by popping all of your ingredients in a bowl. Give it a good mix, either with a wooden spoon, hands, or both. Roll into a ball. Next, break off small pieces, roll into a smaller ball, and then flatted. You should get around 12. Spray the airfryer with a little oil. We used coconut. Pop your cookies in. Cook on bake for 6/7 minutes on each side.
